Ingredients for Fennel and Orange Salad:
- 6 medium-sized fennel bulbs
- 3 oranges
- 1 cup of finely chopped fresh mint
- 1 cup of grated cheese
- 1 tomato
- 4 medium-sized cucumbers
- 1/2 cup of green olives (pitted)
- 1/2 cup of black olives (pitted)
For the Dressing:
- 2 green onions (finely chopped)
- 1/2 cup of fresh lemon juice
- 1/4 cup of olive oil
- 1 teaspoon of salt (or to taste)
- 1 teaspoon of black pepper
Preparation Method for Fennel and Orange Salad:
- After washing the fennel bulbs, slice them thinly and place them in a deep bowl.
- Peel the oranges and cut them into small cubes.
- Lightly peel the cucumbers and slice them into medium-sized pieces. Repeat the same with the tomato.
- Add the orange cubes, cucumber slices, and both green and black olives (pitted) to the fennel slices.
- Finely chop the fresh mint leaves and add them to the bowl with the other ingredients. Stir the ingredients gently.
- Add the grated cheese to the salad and mix it in.
- Set the salad aside while you prepare the dressing.
- In a separate bowl, finely chop the green onions. Add lemon juice, salt, pepper, and olive oil. Mix everything together well until the ingredients are fully combined.
