French Éclair – Easy and Delicious Recipe
French éclairs are one of the most beloved cold desserts, perfect for parties or as a light treat after meals. Their delicate choux pastry, creamy filling, and rich chocolate glaze make them a favorite in French patisseries and home kitchens alike.

Ingredients for French Éclair Dough (Choux Pastry):
- ¾ cup all-purpose flour
- ¾ cup warm water
- ¼ cup soft butter
- 1 tablespoon sugar
- 1 teaspoon vanilla extract
- 3 eggs
Ingredients for Éclair Filling (Pastry Cream):
- ¾ cup all-purpose flour
- 1 cup sugar
- 2 teaspoons vanilla extract
- ½ teaspoon salt
- 3 egg yolks
- 3 cups milk
- ½ cup heavy cream
- 2 tablespoons soft butter
For Decoration:
- 1 cup chocolate chips (dark or white chocolate, melted)
- Chopped nuts, fresh fruit (strawberries, blueberries, kiwi, banana), chocolate shavings, or sprinkles
How to Make French Éclairs
Step 1: Preparing the Choux Pastry (Éclair Dough)
- In a saucepan over low heat, melt butter with sugar, then add water.
- Once the water starts boiling, remove the saucepan from heat.
- Add flour all at once and stir vigorously with a wooden spoon to incorporate air into the dough.
- Transfer the dough to a bowl and let it cool for about 1 minute.
- Add the eggs one by one, making sure each egg is fully mixed before adding the next.
- Stir in the vanilla extract and mix until the dough is smooth, elastic, and easy to pipe.
Step 2: Shaping and Baking the Éclairs

Filling the Éclairs:

- Transfer the pastry cream into a piping bag and fill the éclairs generously.
Decorating the Éclairs:
- Melt the dark or white chocolate using a double boiler (bain-marie).
