How to Make French Éclairs

Step 1: Preparing the Choux Pastry (Éclair Dough)

  1. In a saucepan over low heat, melt butter with sugar, then add water.
  2. Once the water starts boiling, remove the saucepan from heat.
  3. Add flour all at once and stir vigorously with a wooden spoon to incorporate air into the dough.
  4. Transfer the dough to a bowl and let it cool for about 1 minute.
  5. Add the eggs one by one, making sure each egg is fully mixed before adding the next.
  6. Stir in the vanilla extract and mix until the dough is smooth, elastic, and easy to pipe.

Step 2: Shaping and Baking the Éclairs

  1. Preheat the oven to 220°C (428°F).
  2. Transfer the dough into a piping bag and pipe long, cylindrical shapes onto a buttered and lightly floured baking sheet.
  3. Bake at 220°C for 10 minutes, then reduce the heat to 120°C (248°F) and bake for another 20 minutes until the éclairs become golden brown.
  4. Remove from the oven and let them cool completely before filling.

Step 3: Preparing the Pastry Cream (Éclair Filling)

  1. In a saucepan, mix butter, flour, sugar, and salt until well combined.
  2. Add milk and heavy cream, whisking continuously.
  3. Gradually add egg yolks, stirring constantly, followed by vanilla extract.
  4. Place the saucepan over low heat, stirring continuously until the mixture thickens into a creamy consistency.
  5. Remove from heat and allow it to cool completely.

Step 4: Assembling and Decorating the Éclairs

Filling the Éclairs:

  1. Using a sharp knife, make a small slit on the side of each éclair.
  2. Transfer the pastry cream into a piping bag and fill the éclairs generously.

Decorating the Éclairs:

  1. Melt the dark or white chocolate using a double boiler (bain-marie).
  2. Dip the top of each éclair into the melted chocolate, or use a spoon to drizzle chocolate over the top.
  3. Garnish with:
  • Fresh fruits (strawberries, blueberries, kiwi, banana)
  • Shredded chocolate
  • Sprinkles
  • Roasted nuts
  1. Place the éclairs in the refrigerator for about an hour to set.
