Ingredients for Fried Calamari:
- 2 kg of calamari (squid)
- 4 cups of liquid milk
- ½ cup of white vinegar
- 1 teaspoon of paprika
- 1 tablespoon of garlic powder (or 6 cloves of crushed garlic)
- 1 teaspoon of black pepper
- 1 tablespoon of mild red chili powder
- Salt to taste
- 2 cups of flour
- ¼ cup of olive oil
- Corn oil for frying
- 1 teaspoon of white pepper
How to Prepare Fried Calamari:
Begin by washing and cleaning the calamari thoroughly with cold water and salt. Rub them lightly with lemon, rinse again with water, and place them in a strainer to remove excess water.
Prepare the seasoning mixture by combining the milk, black pepper, white pepper, red chili powder, paprika, and vinegar in a deep bowl. Stir the mixture well.
Place the cleaned calamari into the seasoning mixture, stir gently, then cover the bowl and let it marinate for 24 hours (overnight) to absorb the flavors.
The next day, in a flat dish, mix the flour with a pinch of black pepper, red chili powder, paprika, salt, and crushed garlic (or garlic powder). Stir well.
Heat the corn oil in a deep pan over medium heat.
Dip the marinated calamari pieces into the flour mixture, making sure they are well-coated, then fry them in the hot oil.
Fry the calamari at medium heat without stirring until it turns a golden yellow color. Flip the pieces and continue frying until they are fully cooked and golden.
Once cooked, remove the fried calamari from the oil and drain excess oil by placing them on paper towels.
