  • 3 kg rabbit meat
  • 3 tablespoons hot, finely ground red pepper
  • 1/2 cup white vinegar
  • 1 cup lemon juice
  • 1 tablespoon grated ginger
  • 1.5 cups flour
  • 1 cup breadcrumbs (crushed cake)
  • 3 tablespoons ground cumin
  • 6 cloves crushed garlic
  • An appropriate amount of vegetable oil for frying
  • 1 teaspoon ground coriander
  • 2 eggs
  • 1 tablespoon white pepper
  • 1 teaspoon curry powder
  • 1 teaspoon paprika
  • 1 tablespoon tomato juice
  • 1/2 cup yogurt

Preparation Instructions

  1. Clean the Rabbit:
    Wash the rabbit thoroughly several times with cold water and salt. Then, rub it with a bit of lemon salt to help remove any strong odor.

  2. Cut and Marinate:

    • Cut the rabbit into several pieces and place them in a deep bowl.
    • Add the ground cumin, vinegar, lemon juice, yogurt, a bit of crushed garlic, some salt, and the hot, finely ground red pepper.
    • Mix the marinade well and make a few shallow cuts on each piece to allow the flavors to penetrate.
    • Let the rabbit pieces marinate for 2 hours.
  3. Prepare the Egg Coating:

    • In a deep bowl, crack the eggs and add paprika, curry powder, cumin, and the hot red pepper.
    • Mix well, then gradually incorporate the flour while stirring continuously until you obtain a smooth, homogeneous mixture.
  4. Prepare the Breadcrumb Coating:
    Spread the breadcrumbs evenly in a shallow dish.

  5. Frying the Rabbit Pieces:

    • Heat a sufficient amount of corn oil in a frying pan over medium heat until the oil is hot.
    • Dip each marinated rabbit piece into the egg mixture, ensuring it’s fully coated, then roll it in the breadcrumbs.
    • Carefully place the coated pieces into the hot oil.
    • Fry without stirring until the edges begin to turn golden, then flip the pieces and continue frying until they are evenly golden.
  6. Finishing Touches:

    • Remove the fried rabbit pieces from the oil and drain them well on absorbent paper.
    • Arrange the pieces on a serving plate lined with paper towels.
    • Top with a selection of fresh vegetables and serve hot alongside your favorite salad.
