Grilled pepper salad is a delicious and flavorful dish known for its unique taste, ease of preparation, and rich nutritional value. It includes a variety of fresh and nutritious vegetables, making it a healthy addition to any meal.

  • 4 red bell peppers
  • 4 green bell peppers
  • 4 yellow bell peppers
  • 4 orange bell peppers
  • ¼ cup of pitted green olives
  • ¼ cup of fresh lemon juice
  • 5 cloves of minced garlic
  • 5 medium-sized tomatoes, cut into evenly shaped large cubes
  • 4 stalks of green onions, finely chopped
  • 2 tablespoons of hot chili sauce
  • 3 green chili peppers, finely chopped
  • ¼ cup of finely chopped mint
  • ¼ cup of olive oil
  • 3 tablespoons of pomegranate molasses
  • 3 tablespoons of white vinegar
  • 1 teaspoon of ground black pepper
  • Salt to taste

How to Prepare Grilled Pepper Salad:

  1. Preparing the Peppers:

    • Wash the bell peppers thoroughly under cold water.
    • Place them in a colander to drain and dry slightly.
  2. Grilling the Peppers:

    • Line a baking tray with aluminum foil and arrange the dry bell peppers on it.
    • Place the tray in a preheated oven at medium heat for about 5 minutes.
    • Remove the tray from the oven and let the peppers cool slightly.
    • Peel the skin off the grilled peppers.
  3. Chopping and Mixing:

    • Cut the grilled peppers into small, uniform pieces and place them in a deep bowl.
    • Finely chop the mint, green chili peppers, green onions, and tomatoes.
    • Add them to the grilled peppers along with the pitted green olives.
    • Stir the mixture well and set it aside.
  4. Preparing the Dressing:

    • In a separate deep bowl, combine the minced garlic, black pepper, salt, lemon juice, vinegar, hot chili sauce, olive oil, and pomegranate molasses.
    • Stir the mixture for about 3 minutes until all the ingredients are well blended.
