  • 3/4 cup of all-purpose flour
  • 1/4 teaspoon of salt
  • 4 tablespoons of melted butter
  • 3 cups of milk
  • 5 egg whites
  • 5 egg yolks
  • 1 teaspoon of vanilla extract
  • 1/4 teaspoon of cream of tartar
  • 3/4 cup of white sugar

Method of Preparing Japanese Cotton Cake

  1. Sift the flour and salt together and set them aside in a deep bowl.

  2. In another bowl, whisk together the melted butter and milk, then add the vanilla extract and egg yolks, continuing to whisk until the mixture becomes smooth and cohesive.

  3. Add the sifted flour and salt mixture to the previous mixture, and mix again until the batter is well combined.

  4. In a separate bowl, beat the egg whites, cream of tartar, and white sugar together until you get a creamy mixture.

  5. Gently fold the creamy mixture of egg whites and sugar into the previous batter, stirring carefully with a spoon until all ingredients are well incorporated.

  6. Grease a cake pan with a little butter and dust it with some flour. Then pour the batter into the prepared pan.

  7. Preheat the oven to 200°C (392°F). Once the oven reaches the desired temperature, place the cake pan inside and bake for about 30 minutes, checking occasionally to ensure the cake is fully cooked.
