Kofta with Potatoes and Meat – Recipe and Cooking Instructions
Kofta with Potatoes and Meat is one of the most delicious and savory main courses. Ingredients
- 1 kg of fresh beef
- 1 kg of medium-sized potatoes
- 4 tablespoons of fresh coriander
- 1/4 cup of olive oil
- 6 cloves of crushed garlic
- 3 fresh tomatoes
- 3 tablespoons of ground cumin
- 1 tablespoon of paprika
- 1 medium-large onion
- 1 tablespoon of ground sumac
- 2 tablespoons of finely ground black pepper
Preparation Instructions
Prepare the Potatoes:
- Thoroughly wash the potatoes to remove any dirt.
- Place them in a deep pot, cover with water, and bring to a boil over medium heat.
- Allow them to cook for about 30 minutes until they are tender.
Prepare the Herbs and Vegetables:
- Wash the fresh coriander leaves well with cold water, let them drain, and finely chop them.
- Finely dice the onion into evenly sized pieces.
Make the Garlic-Coriander Mixture:
- In a suitable pan, combine the crushed garlic with a pinch of salt.
- Add the chopped coriander and diced onion, stirring well until the ingredients are well blended.
- Pour in the olive oil, place the pan over low heat, and continue stirring until the mixture is fully incorporated.
- Remove from heat and set aside.
Assemble the Kofta Mixture:
- Peel the boiled potatoes and mash them thoroughly.
- Add the beef, black pepper, paprika, and the prepared garlic-coriander mixture to the mashed potatoes.
- Mix all the ingredients well until fully combined.
- Knead the mixture with your hands until it becomes cohesive.
Form and Fry the Kofta:
- With slightly wet hands, shape the mixture into medium-sized balls.
- Heat a generous amount of corn oil in a pan over medium heat until hot.
- Lightly coat the kofta balls in a little flour, then carefully drop them into the hot oil.
- Fry without stirring until one side turns golden, then turn them over.
- Once both sides are evenly golden, remove the kofta from the pan and drain well on paper towels.
