Ingredients:
- 1 whole leg of lamb
- 5 carrots, sliced into rounds
- 2 medium-sized potatoes, sliced into rounds
- 4 cloves of garlic
- 450 grams of green peas
- 3 tablespoons of mixed spices
- 1 teaspoon of ground cardamom
- 1 teaspoon of black pepper
- 2 tablespoons of vinegar
- 2 tablespoons of pomegranate molasses
- 2 tablespoons of steak sauce
- 2 tablespoons of Worcestershire sauce
- Salt to taste
How to Prepare Leg of Lamb with Vegetables:
Marinating the Lamb:
- Wash the leg of lamb thoroughly.
- Place it in a large pot and rub it with ground cardamom, mixed spices, salt, vinegar, black pepper, pomegranate molasses, Worcestershire sauce, and steak sauce.
- Allow the lamb to marinate for at least six hours, preferably overnight, to absorb the flavors.
Preparing the Dish for Baking:
- Place the marinated lamb in a suitable baking tray along with the marinade.
- Add the green peas, sliced carrots, and sliced potatoes around the lamb.
- Cover the tray tightly with aluminum foil.

- Once the lamb is cooked, remove the aluminum foil and return the tray to the oven under the broiler to achieve a golden-brown crust on the surface.
