Marble Cake – Recipe & Cooking Instructions
Marble cake, also known as "Kek Marmel" in some regions, is a delightful and delicious dessert. It is one of the most popular types of cake, known for its unique taste and the contrast of its white and dark layers, as well as the combination of vanilla and chocolate flavors. Ingredients
- 4 cups of flour
- 2 cups of sugar
- 1 block of melted butter or 1 cup of vegetable oil
- 1 cup of liquid milk
- 1/4 teaspoon of salt
- 3 tablespoons of vanilla extract
- 8 large eggs
- 4 tablespoons of cornstarch
- 3 tablespoons of baking powder
- 1 teaspoon of white vinegar
- Zest of 1 lemon
- 6 tablespoons of cocoa powder (or about 1/2 cup)
- 2 tablespoons of apricot jam or honey
Preparation Method
Preparing the Egg Whites and Yolks:
- Start by separating the egg whites from the yolks.
- In a mixer bowl, place the egg whites and add lemon zest, a teaspoon of vinegar, and a pinch of salt. Whisk for about 10 minutes until the mixture is stiff.
- Gradually add the sugar in small amounts, continuing to whisk until the mixture is smooth and shiny.
Preparing the Egg Yolks:
- In a separate bowl, whisk the egg yolks with a bit of lemon zest and a few drops of vinegar.
- Gradually add the remaining sugar and the vanilla extract while whisking quickly.
- Add the melted butter to the yolk mixture, followed by the apricot jam or honey in small amounts, mixing continuously to prevent clumping.
- Add the milk and reduce the whisking speed slightly.
- Gradually add the flour, baking powder, and cornstarch in small batches, mixing thoroughly.
Combining the Mixtures:
- Carefully add the whipped egg whites to the egg yolk mixture in stages, using a spoon to gently fold the mixture together.
- Continue mixing until well combined and smooth, whisking for about 5 more minutes.
Adding Cocoa to Half of the Mixture:
- Pour half of the batter into a separate bowl, then add the cocoa powder to it. Stir quickly until the cocoa is fully incorporated.
Preparing the Cake Pan:
- Grease a cake pan with melted butter and dust it with flour, ensuring the pan is fully coated.
Layering the Batter in the Pan:
- Begin by adding a spoonful of the white batter to the cake pan, followed by an equal amount of the cocoa batter. Repeat the process, alternating between the white and chocolate batter until the pan is filled.
- Use a knife or skewer to gently swirl the two batters together to create the marbled effect.
Baking the Cake:
- Preheat your oven to 185°C (350°F). Place the cake pan in the oven and bake for about 15 minutes at this temperature.
- After 15 minutes, reduce the oven temperature to 170°C (340°F) and bake for an additional 30-45 minutes or until fully cooked.
- To check for doneness, insert a thin skewer into the center of the cake. If it comes out clean, the cake is done.
Cooling the Cake:
- Once the cake is baked, remove it from the oven and let it cool for a few minutes in the pan.
- Then, carefully flip the cake onto a cooling rack and let it cool completely.
