- 500 grams of medium-sized couscous
- 500 grams of frozen green fava beans
- ½ teaspoon of salt
- 1 teaspoon of powdered white sugar
- 150 ml of drinking water
- 150 grams of ghee
- 3 tablespoons of olive oil
How to Prepare Moroccan Couscous with Green Fava Beans:
Begin by cooking the green fava beans using a water bath method. Place them in a small pot and put the pot over a larger pot filled with boiling water. Cover the smaller pot and let the beans steam, stirring occasionally, until they are fully cooked.
Wash the couscous thoroughly and drain it. Then, place the couscous in a bowl with salt and olive oil, and mix well. Afterward, place the couscous over another pot of boiling water, cover it, and let it steam for a short while.
Remove the couscous and place it in a large pot. Use your hands to rub it well, then return it to the steamer. Cover it again and let it cook for about 15 minutes.
