Mujboos Al-Lahm is one of the most famous dishes in the Gulf region, particularly in the Arabian Peninsula. This delicious and nutritious dish is typically served with rice and is highly valued for its flavors and health benefits. Although it takes about two hours to prepare, it's definitely worth the effort. Below is the recipe for making Mujboos Al-Lahm, which serves six people.
Ingredients for Mujboos Al-Lahm:
For the Meat:
- 1 kg of beef (cut into large pieces)
- 1 lemon (juiced)
- Salt to taste
- 2 cinnamon sticks
- 5 cardamom pods
- 1 teaspoon of cloves
- 3 bay leaves
- 1 tablespoon of vegetable oil
- 1 large onion (quartered)
- ¼ teaspoon of black pepper
- ¼ teaspoon of ground coriander
- Meat spices (to taste)
- 1 hot green chili
- 1 tablespoon of tomato paste
- 1 teaspoon of rose water
- ½ teaspoon of ground cardamom
- ¼ teaspoon of saffron
For the Rice:
- 3 cups of washed and drained rice
- 1 large onion (finely chopped)
- Salt to taste
- ¼ teaspoon of white pepper
For the Stuffing:
- 2 medium onions (finely chopped)
- 1 ½ tablespoons of vegetable oil
- 1 ½ cups of boiled chickpeas
- ½ teaspoon of ground cinnamon
- ¼ teaspoon of ground dried lemon (loomi)
- Salt to taste
- ¼ cup of raisins
How to Prepare Mujboos Al-Lahm:
For the Meat:
- Place the beef in a pot, and pour the lemon juice over it, along with a little salt.
- Heat the oil in a large pot, and add the onions and hot green chili. Then, add the cardamom, cinnamon, bay leaves, and cloves, followed by the meat. Stir the mixture until the color of the meat changes.
- Add the ground coriander, black pepper, and meat spices. Cover the ingredients with boiling water and let it cook until the meat is fully tender.
- Once the meat is cooked, remove it from the broth, but keep the broth aside for later use.
- Mix the rose water, ground cardamom, and saffron together.
- Grease a baking dish with a little oil, place the cooked meat pieces in it, add the rose water mixture and tomato paste, and bake it in the oven until the meat turns a reddish color.
For the Rice:
- In a separate pot, add the meat broth and bring it to a boil. Then, add the rice, finely chopped onion, salt, and white pepper.
- Let it cook until the rice is fully cooked and the water is absorbed.
For the Stuffing:
- Heat oil in a pan and sauté the finely chopped onions until they soften.
- Add a small amount of water, stir for 2 minutes, then add the boiled chickpeas, raisins, cinnamon, black pepper, loomi, and salt.
- Stir the mixture for another 2 minutes until it is well combined.
Assembling the Dish:
- Place the cooked rice on a serving platter, followed by the baked meat pieces and the stuffing. Mix everything together until well combined.
- Serve hot to your family or guests, and enjoy the delicious taste of this flavorful dish.
