How to Prepare Palestinian Basbousa:

Step 1: Preparing the Dough

  1. In a large mixing bowl, combine the semolina, baking powder, shredded coconut, and sugar. Mix well to blend the dry ingredients.
  2. Add the butter (or ghee) and cream, then rub the mixture between your fingers until it forms a coarse, crumbly texture.
  3. Gradually add the yogurt, kneading until a soft and cohesive dough forms.

Step 2: Resting and Fermentation

  1. Grease a baking tray with oil or tahini (to prevent sticking).
  2. Spread the dough evenly in the tray, cover it, and let it rest for 1-2 hours (longer if the weather is cold) to allow slight fermentation.

  1. Preheat the oven to 200°C (392°F).
