  • 3 eggs
  • 2 cups of flour
  • 3 tablespoons of melted butter
  • Salt and black pepper (to taste)
  • A pinch of nutmeg
  • Chopped green onions
  • Vegetable oil (for cooking)

Ingredients for Meat Filling:

  • 2 cups of finely ground lamb or beef
  • 1 onion, finely chopped
  • 2 green bell peppers, diced
  • 1 tablespoon of vegetable ghee (or butter)
  • 1 teaspoon of salt
  • A pinch of black pepper
  • A pinch of paprika

For Serving:

  • Béchamel Sauce:

    • 5 tablespoons of flour
    • 1 cup of milk
    • 1 tablespoon of soft butter
    • Salt and black pepper (to taste)
    • A pinch of nutmeg
  • Grated mozzarella cheese


Preparation Method for Stuffed Crepe Pies with Meat:

Step 1: Preparing the Crepe Batter

  1. In a blender, mix milk and eggs until well combined.
  2. Add salt, black pepper, and nutmeg, continuing to blend.
  3. Gradually add melted butter, followed by flour in small batches to avoid lumps. Continue mixing until the batter is smooth.
  4. Stir in the chopped green onions and mix well.

Step 2: Cooking the Crepes

  1. Heat a non-stick pan over low heat and lightly grease it with vegetable oil.
  2. Pour about 2 tablespoons of batter into the pan and spread it evenly into a thin layer.
  3. Cook until the surface dries, then flip and cook the other side until lightly golden.
  4. Repeat the process until all the batter is used, keeping the crepes covered to retain their softness.

Step 3: Preparing the Meat Filling

  1. Heat ghee or butter in a pan and sauté the chopped onion until soft.
  2. Add the diced green bell peppers and stir.
  3. Add the ground meat, salt, black pepper, paprika, and nutmeg. Stir continuously until the meat is fully cooked.

Step 4: Preparing the Béchamel Sauce

  1. In a saucepan, melt butter and stir in flour, cooking for a minute.
  2. Gradually add milk, stirring continuously to prevent lumps.
  3. Add salt, black pepper, and nutmeg, and keep stirring until the sauce thickens.

Step 5: Assembling the Stuffed Crepe Pies

  1. Place a crepe on a flat surface and spoon about 2 tablespoons of the meat filling in the center.
  2. Fold the two opposite sides towards the center, then fold the other two sides to form a square-shaped packet.

Step 6: Baking the Crepes

  1. Grease a baking dish with butter and arrange the stuffed crepes inside.
  2. Spoon a bit of béchamel sauce on top of each crepe.
  3. Sprinkle grated mozzarella cheese over the béchamel.
