  • 6 tablespoons of plain yogurt (room temperature)
  • 2 tablespoons of baking powder
  • Water (as needed)
  • Salt (to taste)
  • 1 packet of instant yeast
  • ½ teaspoon of sugar
  • ½ cup of vegetable oil

For the Filling:

  • 300 grams of fresh mozzarella cheese, sliced
  • 3 cups of ready-made pizza sauce

For Brushing the Dough:

  • 1 egg, beaten
  • Sesame seeds (as desired)

For Garnishing:

  • Fresh basil leaves (as desired)

How to Prepare Sunflower Pie:

Step 1: Preparing the Dough

  1. In a small bowl, mix the sugar and yeast with a little warm water and let it sit for 10 minutes until activated.
  2. In a large mixing bowl, combine the flour, powdered milk, yogurt, baking powder, and salt.
  3. Add the yeast mixture and gradually add water while mixing until a soft dough forms.
  4. Knead the dough well, then coat it lightly with vegetable oil.
  5. Cover and let it rest in a warm place for 30 minutes until it doubles in size.

Step 2: Shaping the Sunflower Pie

  1. Preheat the oven to 180°C (350°F).
  2. Roll out the dough and place it in a greased baking tray.
  3. Using a knife, cut a star shape in the center (without reaching the edges).
  4. Spread pizza sauce around the dough, leaving the cut center untouched.
  5. Layer the sliced boiled eggs and roasted eggplant over the sauce.
  6. Distribute the mozzarella slices evenly on top.

Step 3: Folding the Dough

  1. Fold the triangular dough sections from the center outward, covering parts of the filling and leaving a circular hole in the middle, resembling a sunflower shape.

Step 4: Baking the Pie

  1. Brush the surface of the dough with the beaten egg and sprinkle sesame seeds on top.
  2. Place the pie in the preheated oven and bake for about 12 minutes, or until the crust is golden brown.
  3. Remove from the oven and garnish with fresh basil leaves.

Step 5: Serving

  1. Transfer the Sunflower Pie to a serving plate and serve it hot.

Tips for a Perfect Sunflower Pie:

Use fresh mozzarella for a gooey texture.
Roast the eggplant beforehand to bring out a richer flavor.
Let the dough rest properly to achieve a fluffy texture.
For extra flavor, add black olives or sun-dried tomatoes to the filling.
