Ingredients for Syrian Kishk Pies

Syrian Kishk Pies

For the Dough:

  • 4 cups all-purpose flour
  • 1 cup yogurt (labneh or plain yogurt)
  • 3 tablespoons dry yeast
  • 1 teaspoon bread improver
  • Warm water (as needed)
  • 2 tablespoons sugar
  • A pinch of salt
  • 1 cup vegetable oil

For the Filling:

  • 2 cups finely ground kishk (or 4 cups well-soaked kishk chunks)
  • 1 tablespoon ground hot red pepper
  • 3 onions (finely chopped)
  • 2 tablespoons olive oil

How to Prepare Syrian Kishk Pies

Step 1: Preparing the Dough

  1. In a small cup, mix the yeast with ½ teaspoon of sugar and warm water. Stir well and let it rest for 10 minutes until it activates and doubles in size.
  2. In a large mixing bowl, combine flour, yogurt, bread improver, sugar, salt, and one egg.
  3. Mix the ingredients well, then add vegetable oil and the activated yeast mixture.
  4. Knead the dough using a stand mixer or by hand, adding warm water gradually as needed.
  5. Continue kneading for 10 minutes until the dough becomes soft and elastic.
  6. Transfer the dough to a bowl greased with vegetable oil, cover it with plastic wrap and a clean towel, and let it rise in a warm place for 1 hour until it doubles in size.

Step 2: Preparing the Filling

  1. In a deep bowl, add the soaked and finely ground kishk (ensure there are no lumps).
  2. Mix in the ground red pepper, finely chopped onions, and olive oil.
  3. Stir well until all the ingredients are evenly combined.

Step 3: Shaping the Pies

  1. Once the dough has risen, grease your hands with a little olive oil and divide the dough into medium-sized balls.
  2. Roll each ball into a thin round disc using a rolling pin.
  3. Spread a thin layer of kishk filling evenly over the dough.
  4. Make a small indentation in the center of the dough, then fold the edges toward the center.
  5. Shape the pies into circular rings, sealing the edges tightly.
  6. Using a sharp knife, make a small cut on the ring-shaped dough, twist it three times, and then cut off the excess dough.
  7. Repeat until all the dough and filling are used.

Step 4: Baking the Pies

  1. Preheat the oven to 180°C (350°F) and grease a baking tray with vegetable oil.
  2. Arrange the shaped pies on the baking tray, flattening them slightly with your palm.
  3. Bake for 10 minutes, then reduce the heat and turn on the broiler for an additional 5 minutes until golden brown.

Step 5: Final Touches & Serving

  1. Once baked, remove the pies from the oven and brush them with olive oil while still warm.
  2. Place them on a wire rack to cool slightly before serving.
  3. Serve warm with a cup of tea as a nutritious and delicious breakfast or dinner.
