For the Burger Patty:

  • 2 medium-sized onions (finely chopped)
  • 2 cups soybeans (soaked and drained)
  • 6 cloves garlic (mashed)
  • Salt (to taste)
  • 1 teaspoon black pepper (ground)
  • ¼ kg finely minced meat (optional, for a hybrid version)

For the Assembly:

  • Burger buns
  • 1 cup pickles (cut into medium-sized pieces)
  • 1 cup garlic sauce (toum or mayonnaise-based sauce)

How to Prepare Vegetable and Soybean Burger

Step 1: Preparing the Soybeans

  1. A day before cooking, rinse the soybeans thoroughly with cold water to remove any preservatives.
  2. Soak the beans in lukewarm water for 24 hours until they double in size.
  3. Drain the soybeans in a strainer and set them aside.

Step 2: Preparing the Patty Mixture

  1. In a deep mixing bowl, combine:
    • Finely chopped onions
    • Drained soybeans
    • Minced meat (optional, for a non-vegetarian version)
    • Mashed garlic
    • Salt and black pepper
  2. Mix everything thoroughly until all ingredients are well combined.

Step 3: Shaping the Burger Patties

  1. Take a small portion of the mixture and form it into a ball.
  2. Place the ball inside a plastic bag and gently flatten it using a rolling pin until it forms a medium-thickness patty.
  3. Use a round cutter to shape the patty evenly.

Step 4: Cooking the Burger Patties

  1. Heat oil in a pan over medium heat.
  2. Fry the patties until golden brown and fully cooked, flipping halfway through for even cooking.
  3. Remove and place on paper towels to absorb excess oil.

Step 5: Assembling the Burger

  1. Slice open the burger buns and toast them lightly if desired.
  2. Spread garlic sauce on the bottom bun.
  3. Place a crispy soybean patty on top.
  4. Add pickles and any additional toppings like lettuce, tomatoes, or onions.
  5. Cover with the top bun.
