Baba Ganoush with Vegetables – Recipe & Cooking Method
Baba Ganoush with vegetables is a type of salad famous in Syrian cuisine. It is one of the most delicious and easy-to-make salads. Its ingredients are packed with nutritional benefits that are essential for the body.
This dish can be served alongside any type of meal that requires a salad.
Ingredients for Delicious Baba Ganoush with Vegetables:
- 2 kg of eggplant
- 3 tomatoes
- 1 cup of yogurt
- 2 tablespoons of tahini
- 4 tablespoons of olive oil
- 1 teaspoon of ground red pepper
- 2 red bell peppers
- 2 yellow bell peppers
- 3 green bell peppers
- ½ cup of pomegranate seeds
- 1 teaspoon of salt
- 2 cups of finely chopped parsley
- 1 cup of finely chopped mint
- 2 tablespoons of pomegranate molasses
- 6 cloves of minced garlic
How to Prepare Baba Ganoush with Vegetables:

Prepare the Eggplants:
- Peel the skin off the tops of the eggplants.
- Wrap each eggplant tightly in aluminum foil and repeat the process until all eggplants are wrapped.
- Place the wrapped eggplants in a preheated oven at 225°C (high heat) and roast them for about 1 hour, until they are well-cooked.

Prepare the Vegetables:
- While the eggplants are roasting, wash the parsley thoroughly with water, then soak it in a mixture of water and vinegar for about 5 minutes.
- Rinse the parsley under cold water and drain it in a strainer to remove any excess water.
- Do the same for the mint and leave it to dry.

Prepare the Eggplant and Salad Mixture:
- Once the eggplants are done, remove them from the oven and unwrap them. Let them cool slightly.
- Peel the eggplant, rinse it under cold water, and then place it in a strainer to drain any excess water and oil.
- Finely chop the parsley and mint and place them in a suitable serving dish.
- Dice the tomatoes into very fine pieces and set them aside.
- Cut the red, green, and yellow bell peppers into medium-sized pieces and set aside.

Blend the Eggplant:
- Place the roasted eggplants in a food processor and blend until smooth.
- Pour the blended eggplant into a deep bowl. Add the minced garlic, 1 cup of yogurt, tahini, salt, ground red pepper, and pomegranate molasses. Mix everything well.

Combine with the Vegetables:
- Add the blended eggplant mixture to the chopped vegetables.
- Add the diced tomatoes and mix well.
- Pour in the olive oil and another spoonful of pomegranate molasses, and stir the mixture to combine everything.

- Transfer the Baba Ganoush with vegetables into a suitable serving dish.
- Garnish the top with pomegranate seeds and drizzle with a little extra olive oil.
