Ingredients for a Delicious Bird’s Nest Pasta Dish:

  • 2 packs of pasta sticks (long pasta like spaghetti or fettuccine)
  • 1 kg finely ground lamb
  • 4 tablespoons black pepper
  • 3 tablespoons curry powder
  • 4 tablespoons finely ground red chili powder
  • ¼ cup olive oil (or about 4 tablespoons melted ghee)
  • 1 teaspoon turmeric
  • 1 teaspoon saffron
  • 1 cup finely chopped parsley
  • 3 tablespoons salt
  • 2 medium-sized onions
  • 2 green bell peppers
  • 2 red bell peppers
  • 2 yellow bell peppers
  • 3 cloves minced garlic
  • 6 fresh tomatoes (or 3 tablespoons tomato paste)

How to Prepare Bird’s Nest Pasta:

  1. Boil the Pasta:

    • In a deep pot, bring about 3 liters of water to a boil over medium heat.
    • Add the pasta, a pinch of salt, and 2 tablespoons of oil.
    • Let it cook over low heat for 10 minutes until al dente.
    • Drain the pasta, rinse it immediately with cold water, and let it dry.
  2. Season the Pasta:

    • Once the pasta is dry, mix it with black pepper, red chili powder, curry, saffron, turmeric, and a pinch of salt.
    • Stir well to coat the pasta evenly with the spices.
  3. Prepare the Meat Filling:

    • In a suitable pan, add the minced meat and enough water to cover it.
    • Add a tablespoon of salt and let it cook over low heat until tender.
    • After about 10 minutes, finely chop the onions and add them to the meat mixture.
    • Stir well and then add minced garlic and a tablespoon of ground red chili powder.
    • Stir the mixture thoroughly to blend the flavors.
  4. Prepare the Vegetables:

    • Slice the bell peppers into evenly sized rings.
    • In another pan, heat a little olive oil or 3 tablespoons of melted ghee.
    • Add the sliced bell peppers and stir until well combined.
    • Remove from heat and let it cool slightly.
  5. Make the Tomato Sauce:

    • Peel the tomatoes and blend them until smooth.
    • Strain the juice through a fine sieve and set it aside.
  6. Assemble the Dish:

    • Preheat the oven to a moderate temperature.
    • Grease a baking tray with oil or ghee.
    • Take a small portion of the spiced pasta and wrap it around your fingers to form a nest shape.
    • Arrange the nests in the baking tray and repeat the process until all the pasta is used.
    • Fill each nest with the meat and vegetable mixture.
    • Pour the strained tomato juice over the nests or dissolve tomato paste in water and drizzle it over the dish.
  7. Baking & Serving:

    • Place the tray in the oven and bake at a moderate temperature for about 15 minutes.
    • Once done, remove from the oven and sprinkle finely chopped parsley over the top.
    • Serve hot and enjoy!
