Coconut discs are a popular dessert in Syrian cuisine, known for their delightful taste, beautiful appearance, and perfect pairing with morning coffee. This treat is distinguished by its unique flavor, ease of preparation, and affordability.


Ingredients for Coconut Discs:

  • 1 kg of shredded coconut
  • 2 cups of powdered sugar
  • 4 eggs
  • 2 tablespoons of vanilla powder
  • Zest of one lemon
  • ½ cup of lemon juice
  • 2 tablespoons of baking powder
  • 1 cup of vegetable oil
  • 1 cup of flour
  • 1 teaspoon of white vinegar

How to Prepare Coconut Discs:

Preparing the Dough:

  1. Separate the egg whites from the yolks, placing the whites in a deep bowl. Add the lemon zest and a few drops of white vinegar.
  2. Whisk the mixture well, then gradually add the sugar and vanilla, continuing to beat using an electric mixer until fully combined.
  3. In a separate bowl, mix the shredded coconut, baking powder, and flour, stirring well to ensure even distribution.
  4. Slowly add the dry mixture into the beaten egg whites, mixing thoroughly.
  5. Add the lemon juice, a little yogurt, and vegetable oil, then continue mixing until a soft and cohesive dough forms.
  6. Transfer the dough into a deep bowl, cover it with plastic wrap, and let it rest for 30 minutes.

Shaping the Coconut Discs:

  1. Preheat a baking tray in the oven until it is slightly warm.
  2. Take a small portion of the dough, roll it into evenly sized small balls, ensuring they are uniform.
  3. Lightly grease a mold with a drop of oil, place a dough ball inside, and press gently to flatten and smooth its surface.
  4. Turn the mold over and tap it gently on a smooth surface to release the shaped cookie.
  5. Repeat the process until all the dough is used.

Baking the Coconut Discs:

  1. Arrange the shaped coconut discs on a lightly greased or parchment-lined baking tray, keeping enough space between them to prevent sticking.
  2. Bake in a preheated oven at 175°C (347°F) until the cookies are golden brown on the surface.
  3. Once baked, remove them from the oven and let them cool on a clean cloth.
