Corn Soup – Corn Soup Recipe – How to Cook Corn Soup
Corn soup, also known as Caesar soup, is a classic dish from Chinese cuisine. It’s delicious, easy to prepare, and doesn’t take long to make.
It’s usually served as a side dish alongside main courses. Light on the stomach yet rich in nutrients, it’s also considered a wholesome meal for children due to the many health benefits of corn.
Ingredients for Corn Soup:

3 cups of corn

1 large onion

2 garlic cloves
-
1 cup of milk
-
3 tablespoons of sifted flour
-
4 cups of water
-
½ cup of medium-cut potatoes
-
½ teaspoon of salt
-
1 teaspoon of black pepper
-
1 cup of fried almonds
-
1 cup of pine nuts
-
¼ cup of olive oil or 4 tablespoons of ghee
How to Prepare Corn Soup:

Take the cream (if using) out of the fridge about three hours before cooking so it reaches room temperature.

In a suitable pot, place the corn.

Finely chop the onion and cut the potatoes into medium-sized cubes.

Add the chopped onion to the pot along with the potatoes, garlic, and corn. Season with a pinch of salt and black pepper.

Pour in the water and a bit of chicken broth if available. Place the pot on medium heat and bring to a boil.

Once it starts boiling, lower the heat and let it simmer for 10 minutes, until the corn is fully cooked.

Remove the pot from the heat and allow the mixture to cool slightly. Transfer the contents to a blender.

Blend the corn mixture thoroughly until smooth, then pour it back into the pot.

In a separate bowl, whisk the cream until soft and smooth.

Add the whipped cream to the blended corn mixture, stirring gently to combine.

Simmer the mixture over low heat for 30 minutes, stirring continuously.

Once it begins to boil, reduce the heat further and let it cook for another 10 minutes.

Remove the soup from the heat and ladle it into a large serving bowl or individual bowls.

Garnish the top with roasted almonds and pine nuts. Optionally, sprinkle some chopped parsley or mint leaves over the nuts for extra flavor and presentation.
This corn soup is best served warm as a flavorful side dish next to your main meal.
