Fajita – Mexican-Style Chicken Fajitas Recipe

Fajitas are one of the most delicious and widely loved dishes with Mexican origins. They are known for their rich flavors, vibrant colors, and quick preparation.

This dish is popular worldwide, and it can be made with lamb, beef, or chicken. Today, we will prepare a mouthwatering chicken fajita with a perfect balance of spices, vegetables, and cheese.


Ingredients for Chicken Fajitas:

For the Chicken:

  • 3 kg boneless chicken breasts, cut into thin strips
  • ½ cup vinegar
  • ½ cup lemon juice
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon ground cardamom
  • 1 teaspoon cumin
  • 1 tablespoon fajita or shawarma spices
  • 1 teaspoon curry powder
  • 1 teaspoon paprika
  • ¼ cup olive oil (or 4 tablespoons melted ghee)
  • 1 bay leaf

For the Vegetables:

  • 3 green bell peppers, sliced
  • 3 red bell peppers, sliced
  • 2 onions, finely chopped
  • ¼ cup finely chopped green onions
  • 3 cups sliced mushrooms (about ½ kg fresh mushrooms)
  • 2 cups corn, rinsed and drained

For Garnishing & Serving:

  • 1 cup Kashkaval cheese (or mozzarella), shredded
  • Lemon slices & fresh vegetables (for decoration)
  • Tortillas or pita bread
  • Fresh salad or guacamole (optional)

How to Prepare Chicken Fajitas:

1. Preparing the Chicken Marinade:

  1. Wash the chicken strips well with salt and water, then drain.
  2. In a deep bowl, mix vinegar, lemon juice, salt, black pepper, cardamom, cumin, shawarma spices, curry powder, paprika, and olive oil.
  3. Add the chicken strips and mix well until fully coated.
  4. Cover and let the chicken marinate for at least 1 hour to absorb all the flavors.

2. Cooking the Chicken:

  1. In a large pot, place the marinated chicken strips and add a small amount of water along with a bay leaf.
  2. Bring to a gentle boil over medium heat, then reduce the heat and let it simmer until fully cooked.

3. Sautéing the Vegetables & Finalizing the Dish:

  1. Once the chicken is almost cooked and the water has evaporated, add the finely chopped onions and stir well.
  2. When the onions soften, pour in olive oil or melted ghee and sauté.
  3. Add the sliced green, red, and yellow bell peppers, stirring gently to mix them with the chicken.
  4. Toss in the sliced mushrooms, mixing carefully. Cover the pan and let it cook on low heat for 10 minutes.
  5. Add the corn kernels, stir, and allow everything to cook through.

4. Serving the Fajitas:

  1. Once the fajita mixture is fully cooked, sprinkle shredded cheese over the top while still hot.
  2. Transfer the fajitas to a serving dish and decorate with lemon slices and fresh vegetables.
  3. Serve hot with tortillas, pita bread, or a fresh side salad.
