Feteer Meshaltet – Recipe & How to Make Feteer Meshaltet

Feteer Meshaltet, also known as Feteer Matlouta or Egyptian layered pastry, is a popular Egyptian dish often served during special occasions, celebrations, and holidays.

It is similar to a croissant in France and is known for its flaky, crispy layers. This recipe is easy to prepare, delicious, and is loved by both children and adults.

  • 4 cups of sifted all-purpose flour
  • 1 tablespoon of sugar
  • ½ teaspoon of salt
  • 1 tablespoon of fresh lemon juice
  • ¼ cup of vegetable oil or 4 tablespoons of ghee (clarified butter)
  • Lukewarm water, as needed

How to Prepare Feteer Meshaltet:

  1. Prepare the Dough:

    • In a stand mixer or large bowl, sift the flour, then add the salt and sugar. Mix the ingredients well.
    • Add the lemon juice and start mixing with a stand mixer or by hand. Gradually add the lukewarm water while mixing continuously until the dough begins to form a smooth, elastic texture.
    • Continue mixing until the dough becomes cohesive and smooth to the touch.
  2. Knead the Dough:

    • Transfer the dough to a greased bowl and knead it for a few minutes to ensure it is fully mixed and smooth.
    • Divide the dough into equal-sized balls, making sure they are evenly shaped.
  3. Rest the Dough:

    • Place the dough balls in a greased dish (either with oil or ghee), cover them with plastic wrap, and let them rest for 30 minutes in a warm place to rise.
  4. Prepare the Oil and Ghee Mixture:

    • In a small bowl, mix vegetable oil and melted ghee (you can adjust the ratio as you prefer) and set aside.
  5. Shape the Feteer:

    • On a flat surface, drizzle some of the oil and ghee mixture. Place a dough ball on the surface and gently flatten it with your palms to form a thin disc.
    • Repeat this process with all the dough balls, spreading them out into thin layers.
    • Stack the discs on top of each other, brushing each layer with the oil and ghee mixture.
    • Once all layers are stacked, roll the dough into a log and then form it into a spiral shape (or disc shape if you prefer).
  6. Rest Again:

    • Let the shaped feteer discs rest for about 10 minutes before baking.
  7. Bake the Feteer:

    • Preheat your oven to 180°C (350°F).
    • Place the prepared discs on a greased baking sheet and bake for 25 minutes, or until the feteer is golden and crispy.
  8. Serving:

    • Remove the feteer from the oven and let it cool for a few minutes.
    • Serve the crispy, flaky feteer with your favorite side, such as cheese or yogurt.
