Fricassee – Tunisian Fried Bread Recipe
What is Fricassee?
Fricassee is a popular type of fried bread widely enjoyed in North Africa, especially in Tunisia. Tunisian cuisine is known for its rich flavors and diverse dishes, and Fricassee is no exception.
This bread is soft, slightly crispy, and incredibly flavorful, often stuffed with various fillings, such as:
- Chicken and vegetables
- Mushrooms and cheese
- Black and green olives with cheese and vegetables
- Served plain alongside meals instead of regular bread
Ingredients for Tunisian Fricassee Bread:
- 1 kg all-purpose flour (sifted)
- 1 cup warm milk
- 1 cup lukewarm water
- ¼ cup vegetable oil
- 1 teaspoon salt
- 2 tablespoons dry yeast
- 1 egg
How to Prepare Tunisian Fricassee Bread:
1. Preparing the Dough:
- In a large mixing bowl, add the sifted flour, salt, and egg, then mix well.
- In a small cup, dissolve the yeast with ½ teaspoon sugar and a little warm water. Cover and let it sit for 10 minutes until it becomes foamy.
- Add the yeast mixture to the flour.
- Gradually pour in the warm milk, mixing continuously until you get a soft, smooth dough.
- Knead the dough thoroughly, then cover it with plastic wrap and let it rise for 1 hour until it doubles in size.
2. Shaping the Dough:
- Once risen, remove the dough from the bowl and knead it again to increase its elasticity.
- On a lightly oiled surface, roll out the dough evenly using a rolling pin.
- Cut the dough into small circular discs of equal size.
- Place the discs on a greased tray, cover them with a clean cloth, and let them rest for 15 minutes.
3. Frying the Fricassee Bread:
- Heat 2 liters of vegetable oil in a deep pan over medium heat.
- Gently drop the dough discs into the oil, frying them until golden brown.
- Make sure the oil is not too hot, allowing the bread to cook thoroughly inside (a white line in the middle indicates it's perfectly cooked).
- Once done, remove them from the oil and place them on paper towels to absorb excess oil.
4. Serving the Fricassee:
- Once cooled, the bread can be served plain or stuffed with your favorite fillings, such as:
- Spiced chicken & vegetables
- Cheese & olives
- Tuna & harissa (for a Tunisian touch!)
