Harissa with cream is a delicious and rich Middle Eastern dessert, known for its high nutritional value and easy preparation. This sweet treat requires about one hour to make and serves eight people.


Ingredients for Harissa with Cream:

For the Harissa:

  • 3 cups of semolina
  • 1 cup of yogurt
  • 1 cup of melted butter
  • 1 cup of shredded coconut
  • 3 tablespoons of powdered milk
  • 3 teaspoons of baking powder
  • ½ teaspoon of baking soda
  • 1 cup of white sugar
  • 2 eggs
  • Tahini for greasing the baking pan (as needed)

For the Syrup (Qatar):

  • 2 ½ cups of water
  • 1 ½ cups of white sugar
  • 1 teaspoon of lemon juice
  • 4 tablespoons of rose water

For the Cream Filling:

  • 2 cups of fresh milk
  • 3 tablespoons of cornstarch
  • 1 tablespoon of all-purpose flour
  • 1 tablespoon of white sugar
  • 1 can of thick cream (such as Qashta)
  • 3 tablespoons of rose water

How to Prepare Harissa with Cream:

Preparing the Syrup:

  1. In a saucepan over medium heat, mix the sugar and water and bring to a boil.
  2. Add the lemon juice and stir until the syrup thickens slightly.
  3. Turn off the heat, add the rose water, and let the syrup cool completely.

Preparing the Harissa Batter:

  1. In a large mixing bowl, combine the semolina, powdered milk, shredded coconut, baking soda, baking powder, and sugar. Mix well.
  2. Add the eggs, yogurt, and melted butter, then stir until the ingredients are fully combined.
  3. Let the batter rest for 20 minutes.

Preparing the Cream Filling:

  1. In a saucepan, mix the milk, flour, sugar, and cornstarch over medium heat. Stir constantly until the mixture thickens.
  2. Add the rose water and cream, stirring until fully incorporated.
  3. Remove from heat and set aside to cool slightly.

Assembling and Baking the Harissa with Cream:

  1. Preheat the oven to 180°C (356°F).
  2. Grease a baking pan with tahini to prevent sticking.
  3. Spread half of the harissa batter evenly across the bottom of the pan.
  4. Pour the cream filling over the harissa layer, ensuring it covers the surface evenly.
  5. Spread the remaining harissa batter on top of the cream layer, smoothing it out evenly.
  6. Place the baking pan in the preheated oven on the middle rack and bake until the top and edges are golden brown.

Final Steps:

  1. Remove the pan from the oven and cut the harissa into squares while still hot.
  2. Immediately pour the cold syrup evenly over the hot harissa.
  3. Allow the harissa to absorb the syrup and cool for at least 3 hours before serving.
