How to Prepare Indian Potato Samosa

Preparing the Dough:

  1. In a large bowl, mix the flour and salt until well combined.
  2. Add the vegetable oil and rub the mixture with your fingers for about one minute until it resembles sand.
  3. Gradually add warm water while kneading, then add the lemon juice. Continue kneading until you get a smooth, elastic dough.
  4. Cover the dough and let it rest for 15 minutes in a warm place.

Preparing the Filling:

  1. Heat oil in a pan over medium heat, then add the cumin seeds and stir for one minute.
  2. Add the chopped onions and sauté for about 5 minutes until soft.
  3. Stir in the curry powder and green peas, cooking for one more minute.
  4. Add the potatoes, coriander, raisins, black pepper, and salt (to taste). Stir well to combine all ingredients.
  5. Remove from heat and let the filling cool completely.

Assembling the Samosas:

  1. Roll out the dough on a lightly floured surface to prevent sticking. Cut it into medium-sized circles.
  2. Place a spoonful of filling in the center of each circle.
  3. Fold the dough into a triangle, sealing the edges by pressing them together firmly.

Frying the Samosas:

  1. Heat a generous amount of oil in a deep pan over medium-high heat.

  2. Fry the samosas one by one until golden brown.

  3. Place them on paper towels to drain excess oil.

  4. Serve hot and crispy with your favorite dipping sauce.
