Kofta with Vegetables – A Nutritious & Flavorful Recipe

For the Kofta (Meatballs):

  • 250 g finely ground beef
  • 2 tablespoons finely chopped fresh parsley
  • 2 sprigs fresh dill, finely chopped
  • ½ teaspoon black pepper (adjust to taste)
  • ½ teaspoon salt (adjust to taste)
  • ½ teaspoon meat spices (optional)
  • 1 teaspoon soy sauce

For the Vegetables:

  • ½ green bell pepper, sliced thinly
  • ½ red bell pepper, sliced thinly
  • 4 medium zucchini, sliced into rounds
  • 1 medium carrot, sliced into rounds
  • 1 medium tomato, sliced
  • 1 medium onion, chopped
  • 2 garlic cloves, minced

How to Prepare Kofta with Vegetables:

1. Preparing the Kofta (Meatballs):

  1. In a mixing bowl, combine ground beef, parsley, dill, black pepper, salt, soy sauce, and meat spices.
  2. Mix well until all the ingredients are evenly incorporated.
  3. Shape the mixture into small meatballs, about the size of a nutmeg.
  4. Place the kofta balls evenly in a baking dish.

2. Preparing the Vegetables:

  1. Slice the bell peppers, zucchini, carrot, and tomato into thin, uniform pieces.
  2. Chop the onion and mince the garlic.
  3. Arrange the vegetables evenly around the kofta balls in the baking dish.

3. Baking the Kofta with Vegetables:

  1. Preheat the oven to 180°C (350°F).
  2. Place the baking dish in the oven and bake until the meatballs and vegetables are fully cooked (about 30 minutes).

4. Serving the Dish:

  1. Remove the dish from the oven and transfer the kofta with vegetables onto a serving plate.
