Leeks – Leek Recipe – How to Cook Leeks – Cooking Guide

Leeks, also known as "Kurrath" in some regions, are highly nutritious and have a delicious taste. This dish is especially popular in the Levant, often served alongside rice. There are multiple ways to prepare leeks, and today we will introduce two delicious recipes: one with meat and another with oil. We hope you enjoy both!


How to Prepare Leeks with Meat

Leeks

 

Ingredients:

  • 1 kg of leeks
  • ½ kg of finely ground meat
  • 2 carrots, peeled and cut into medium-sized pieces
  • 1 tablespoon of ghee (clarified butter)
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper

Preparation:

  1. Wash the leeks thoroughly, then cut them into medium-sized pieces.
  2. In a medium-sized pot, melt the ghee and add the ground meat. Cook over medium heat, stirring continuously until the meat is fully cooked.
  3. Add black pepper and salt to the meat, stirring well to combine.
  4. Add the carrot pieces and stir well. Then, add the chopped leeks and mix all ingredients thoroughly.
  5. Pour a sufficient amount of water over the mixture and let it cook for about 15 minutes until everything is well cooked.
  6. Once done, transfer the dish to a serving plate and enjoy this delicious, nutritious meal with family or guests.

How to Prepare Leeks with Oil

Ingredients:

  • ¼ cup of yogurt
  • 4 cloves of minced garlic
  • 3 chopped leeks
  • 1 kg of spinach
  • ½ teaspoon of apple cider vinegar
  • ½ teaspoon of black pepper
  • ½ teaspoon of salt
  • 2 tablespoons of corn oil
  • 250 g of sour cream

Preparation:

  1. Wash and chop the spinach, then place it in a pot with drinking water. Boil for 10 minutes or until the spinach becomes soft and fully cooked.
  2. Wash the leeks and cut them into small pieces.
  3. Heat the corn oil in a pot over medium heat, then add the chopped leeks and sauté for about 25 minutes, stirring occasionally until they soften.
  4. Add the spinach, black pepper, and salt, stirring well to combine. Let the mixture cook for 3 more minutes until all ingredients become tender.
  5. Remove the pot from heat and let it cool completely. Then, transfer the mixture into a deep bowl and add the yogurt, minced garlic, sour cream, and vinegar. Mix well until fully combined.
  6. The dish is now ready to serve. Place it in a serving dish and enjoy it cold with family or guests.
