Majboos Samak – Gulf-Style Fish Majboos Recipe

Majboos is one of the most famous dishes in the Gulf region, especially in Saudi Arabia. This traditional rice dish comes in different variations, including lamb, chicken, and fish. Each version is packed with rich flavors and high nutritional value.

Today, we present one of the healthiest and most delicious versions—Fish Majboos—hoping it will be to your liking.


Ingredients for Fish Majboos:

Majboos Samak

 

For the Fish:

  • 3 fish fillets
  • 5 cloves of garlic (mashed)
  • 1 lemon (juiced, and peel kept separately)
  • 1 teaspoon salt
  • 1 teaspoon cumin
  • 3 tablespoons olive oil

For the Rice:

  • 2 ½ cups of rice
  • 1 large potato
  • 1 large onion
  • 1 large tomato
  • 2 dried black limes (loomi)
  • 1 teaspoon turmeric
  • 1 tablespoon ghee
  • 4 cups of water

How to Prepare Fish Majboos:

1. Marinating the Fish:

  1. In a mixing bowl, combine mashed garlic, olive oil, lemon juice, salt, cumin, and chopped lemon peel (cut into large chunks).
  2. Coat the fish fillets well with this mixture, cover, and refrigerate overnight for enhanced flavor.

2. Preparing the Ingredients:

  1. The next day, remove and discard the lemon peel from the marinade.
  2. Fry the marinated fish fillets until fully cooked, then set them aside.
  3. Peel and chop the potato into medium-sized cubes.
  4. Dice the onion into small cubes.
  5. Blend the tomato in a food processor or blender until it becomes a smooth sauce.

3. Cooking the Rice:

  1. In a large pot, heat 4 cups of water over medium heat.
  2. Add the tomato sauce, dried black lime (loomi), and turmeric.
  3. Bring to a boil, then add the potatoes and onions and let them cook until the potatoes soften.
  4. Rinse the rice well and add it to the pot, stirring gently.
    • Make sure the water level covers the rice by about 1 cm.
  5. Once the water starts reducing slightly, place the fried fish fillets on top of the rice.
  6. Lower the heat to very low, cover the pot, and let it cook undisturbed for 20 minutes.

4. Serving the Fish Majboos:

  • Once the rice is fully cooked, transfer the Majboos Samak to a serving platter.
  • Serve hot and enjoy this flavorful Gulf delicacy with your family or guests.
