  • 3 tablespoons sugar
  • 2 tablespoons yeast
  • 1 cup vegetable oil

  • Warm water, as needed
  • ½ cup melted butter (for brushing)

How to Prepare Milk Bread Rolls (Samoon):

1. Preparing the Dough:

  1. In a large mixing bowl or stand mixer, combine flour, sugar, salt, and warm milk.
  2. In a separate small bowl, mix yeast with ½ teaspoon sugar and warm water, then let it sit for 5-10 minutes until it foams (this confirms the yeast is active).
  3. Add the yeast mixture and melted butter to the flour mixture.
  4. Knead the dough for 10 minutes until it becomes soft and smooth.

2. First Proofing (Letting the Dough Rise):

  1. Shape the dough into a large ball and place it in a lightly greased bowl.
  2. Cover the bowl with plastic wrap and let it rise for 1 hour in a warm place until it doubles in size.

3. Shaping the Rolls:

  1. Once the dough has risen, divide it into equal portions and shape them into cylindrical or oval rolls.
  2. Place the shaped rolls on a greased baking tray, leaving some space between them.
  3. Cover them with a clean cloth or plastic wrap and let them rest for another 2 hours to allow further proofing.

4. Baking the Rolls:

  1. Preheat the oven to 180°C (350°F).
  2. Lightly brush the rolls with melted butter before baking for extra softness.
  3. Bake for 15-20 minutes, or until the rolls turn golden brown and are fully cooked inside.

5. Cooling & Serving:

  1. Remove the rolls from the oven and let them cool on a clean kitchen towel.
  2. Arrange them on a serving plate and serve warm or at room temperature.
