Pizza is one of the most delicious and beloved types of baked goods, known for its easy and quick preparation and exceptional taste.

The preparation and flavor of this dish vary depending on the culinary traditions and the sauce ingredients used. The choice of toppings also depends on personal preference—some prefer pizza with mushrooms and vegetables, while others love the taste of meats like chicken or mortadella.

Pizza originated in Italian cuisine, where Italians used to cook a layer of dough on a hot surface and top it with meats and vegetables. This delicious dish later spread worldwide, with each country adding its own culinary touch.

Homemade pizza is a favorite for families, making it a perfect meal for children or an easy-to-pack dish for picnics.


Ingredients for Mini Pizza Discs:

For the Dough:

  • 4 cups of flour
  • 1 teaspoon of sugar
  • ½ cup of vegetable oil
  • 1 cup of warm milk or room-temperature yogurt
  • 1 tablespoon of salt
  • 2 tablespoons of yeast
  • Warm water (as needed)
  • 1 egg

For the Pizza Sauce:

  • 5 medium-sized tomatoes (or 4 tablespoons of tomato paste)
  • 3 green bell peppers
  • 2 medium-sized onions
  • 3 cloves of minced garlic (or 2 tablespoons of garlic powder)
  • 3 red chili peppers
  • 1 ½ cups of mushrooms
  • 1 large pack of mortadella
  • 1 tablespoon of dried oregano
  • 1 pack of kashkaval cheese

How to Prepare Mini Pizza Discs:

Preparing the Dough:

  1. Test the Yeast: In a cup, mix the yeast with ½ teaspoon of sugar. Add ¾ cup of warm water, stir well, cover, and let it activate for 10 minutes.
  2. In a deep bowl, combine the flour, sugar, and salt. Mix well.
  3. Add the yogurt (or warm milk) and mix. Then, add the egg and combine thoroughly.
  4. Pour in the activated yeast mixture and a little oil, mixing everything until fully incorporated.
  5. Knead the dough until smooth, then place it in a greased bowl, cover it with plastic wrap, and leave it in a warm place for about 30 minutes to rise.

Preparing the Sauce:

  1. In a deep pot, heat a little oil, add the finely chopped onions, and a pinch of salt. Stir over low heat until the onions soften.
  2. Add the minced garlic and finely chopped green bell pepper, stirring well.
  3. Add the grated or blended tomatoes (or tomato paste), mix thoroughly, and let it simmer over low heat for 10 minutes.
  4. Add the washed, drained mushroom slices, dried oregano, and finely chopped red chili peppers. Stir well, cover, and let the mixture simmer for another 10 minutes.
  5. Remove the pot from heat and let the sauce cool slightly.

Assembling the Mini Pizzas:

  1. Slice the red and green bell peppers into uniform circles.
  2. Prepare some pitted green and black olives.
  3. Divide the dough into evenly sized balls. Flatten each ball slightly with your palm on a lightly greased surface, then arrange them on a baking tray.
  4. Preheat the oven to moderate heat and place the tray inside for 10 minutes to allow the dough to partially bake.
  5. Remove the tray from the oven, spread a layer of sauce on each dough disc, and top with a slice of mortadella and bell pepper rings.
  6. Place an olive in the center of each bell pepper ring.
  7. Return the tray to the oven and bake for 5 more minutes.
  8. Evenly sprinkle shredded kashkaval cheese on each pizza, turn off the oven, and leave the tray inside for another 10 minutes to allow the cheese to melt.

Serving:

  • Remove the mini pizzas from the oven and arrange them on a serving platter.
  • Serve warm or hot with a side of salad or a traditional tabbouleh dish.
