  • 1 medium-sized chicken (around 4 kg), cut into medium pieces
  • 3 tablespoons of ground red chili pepper
  • 3 tablespoons of ground cumin
  • 6 cloves of minced garlic
  • 2 kg of potatoes
  • 1 teaspoon of black pepper
  • 3 tablespoons of tomato paste
  • 1 cup of plain yogurt
  • 3 tablespoons of paprika
  • 2 tablespoons of saffron
  • 3 tablespoons of salt
  • 4 tablespoons of ghee or ¼ cup of olive oil
  • 1 cup of fresh lemon juice
  • 1 tablespoon of coriander
  • 3 tablespoons of special shish spice mix
  • 1 cup of vinegar
  • 1 lemon, sliced into rounds

How to Prepare Oven-Baked Chicken Tray:

Marinating the Chicken:

  1. Thoroughly wash the chicken pieces with salt and cold water, then drain well.
  2. In a deep bowl, mix the minced garlic, a pinch of salt, tomato paste, curry powder, turmeric, saffron, paprika, cumin, coriander, shish spices, black pepper, and red chili pepper. Stir well until the ingredients are well blended.
  3. Pour in 1 cup of vinegar and ¼ cup of lemon juice, then mix thoroughly to form a uniform marinade.
  4. Add the chicken pieces to the bowl, coat them well with the marinade, and arrange lemon slices over them.
  5. Let the chicken marinate for at least 1 hour to absorb the flavors.

Preparing the Potatoes:

  1. Peel the potatoes, wash them well, and cut them into thick rounds.
  2. Place them in a bowl, add a little salt, red chili pepper, cumin, and shish spices, and mix well to coat the potatoes evenly.

Assembling the Dish:

  1. Arrange the seasoned potato slices in a glass baking dish, making sure they are tightly packed without gaps.
  2. Place the marinated chicken pieces on top of the potatoes and drizzle some oil over them.

Baking the Chicken Tray:

  1. Preheat the oven to 200°C (392°F).
  2. Bake the dish for 1.5 hours or until the chicken is fully cooked and golden brown.
  3. Once the chicken is done, evenly drizzle fresh lemon juice over the entire dish and let it simmer in the oven for an additional 3 minutes.

Serving:

  • Remove the tray from the oven and serve hot.
