For the Pasta:

  • 1 pack of pasta (any type)
  • 2 liters of water
  • 1 teaspoon salt
  • 1 tablespoon vegetable oil

For the Chicken & Vegetables:

  • 2 kg boneless chicken breasts, sliced into strips
  • 2 teaspoons black pepper
  • 1 teaspoon salt
  • 2 yellow bell peppers, chopped
  • 2 red bell peppers, chopped
  • 2 green bell peppers, chopped
  • 3 garlic cloves, minced
  • 1 medium onion, finely chopped
  • 1 teaspoon dried thyme
  • 2 teaspoons ground coriander
  • ¼ cup olive oil
  • 1 teaspoon curry powder
  • 1 teaspoon saffron
  • 2 teaspoons paprika
  • ½ cup tomato sauce
  • 3 tablespoons heavy cream
  • 1 cup grated Kashkaval cheese (or mozzarella)
  • Chopped parsley and mint (for garnish)

How to Prepare Pasta with Chicken and Vegetables:

1. Cooking the Pasta:

  1. Bring 2 liters of water to a boil in a large pot over medium heat.
  2. Add the pasta, a pinch of salt, and a little vegetable oil.
  3. Let the pasta cook on low heat for 10 minutes, stirring occasionally.
  4. Drain the pasta using a colander, rinse with cold water, and set aside.

2. Preparing the Chicken:

  1. Rinse the chicken breasts thoroughly with salt and water, then slice into thin strips.
  2. Place in a deep pot, cover with water, and add a bay leaf and salt.
  3. Simmer until the chicken is fully cooked, then drain and set aside.

3. Cooking the Vegetables:

  1. In a large pan, heat 3 tablespoons of olive oil over low heat.
  2. Add the chopped onion and sauté until soft.
  3. Stir in the minced garlic and chopped bell peppers, then cook until the peppers soften.

4. Combining the Ingredients:

  1. Add the cooked chicken strips to the vegetables.
  2. Sprinkle in the black pepper, paprika, saffron, curry powder, dried thyme, and ground coriander.
  3. Stir well and let the flavors blend together.
  4. Pour in the tomato sauce and ¼ cup water, then let it simmer.
  5. Stir in the heavy cream, mixing well for a creamy texture.

5. Final Assembly:

  1. Add the cooked pasta to the pan and mix gently until fully coated with the sauce.
  2. Sprinkle in grated Kashkaval or mozzarella cheese, stirring well.
  3. Transfer the pasta to a serving dish and top with extra grated cheese.
  4. Garnish with chopped parsley and mint for a fresh flavor.
