Qatayef Asafiri – Recipe & Cooking Guide
Qatayef is a traditional dessert that is prepared year-round but is especially popular during the holy month of Ramadan, where it becomes a staple sweet dish after iftar. There are various ways to make qatayef, but one of the most famous and beloved types is Qatayef Asafiri.
This delightful and easy-to-make dessert is rich in flavor and high in nutritional value. Below are the ingredients and preparation steps to help you recreate this delicious treat at home.
Ingredients for Qatayef Asafiri:
For the Qatayef Batter:
- 2 cups white flour
- ½ cup fine semolina
- 2 tablespoons white sugar
- 1 tablespoon cornstarch
- 2 teaspoons baking powder
- 2 ½ cups water
- 1 teaspoon orange blossom water
For the Qatayef Cream Filling (Ashta):
- 2 cups fresh milk
- 1 cup canned cream
- ¼ cup white flour
- ¼ cup cornstarch
- 1 tablespoon orange blossom water
- 2 tablespoons white sugar
For Garnishing & Serving:
- Crushed pistachios (for garnish)
- Simple syrup (Atir), as desired
How to Prepare Qatayef Asafiri:
1. Preparing the Qatayef Batter:

In a blender or food processor, combine flour, semolina, sugar, cornstarch, baking powder, and water.

Blend on medium speed until the batter becomes smooth and slightly runny.

Let the batter rest for 30 minutes to allow the ingredients to settle.

Cooking the Qatayef:
- Heat a thick-bottomed pan or griddle over medium heat.
- Pour the batter into the pan using a small cup to form round discs (adjust the size as preferred).
- Cook the qatayef on one side only until the surface dries and bubbles appear.
- Do not flip; remove from the pan and place in a tray to cool.
- Repeat until all the batter is used.
2. Preparing the Ashta Filling (Cream Filling):
- In a deep pot, combine fresh milk, cream, flour, cornstarch, and sugar.
- Stir well using a whisk until the sugar and cornstarch dissolve.
- Place the pot over medium heat and continue stirring with a wooden spoon until the mixture thickens.
- Once thick, remove from heat and stir in the orange blossom water.
- Let the cream cool completely, then refrigerate until fully set.
3. Assembling the Qatayef Asafiri:
- Take each qatayef piece, fold it in half, and pinch the edges together on one side to form a cone shape.
- Using a small spoon or piping bag, fill the open end of each qatayef with the prepared ashta cream.
- Garnish the top with crushed pistachios.
4. Serving:
- Arrange the Qatayef Asafiri on a serving platter.
- Drizzle simple syrup (Atir) over them or serve syrup on the side for dipping.
