Rice Pudding – Recipe & How to Make Traditional Rice Pudding

Rice pudding is one of the most delicious and comforting desserts, originating from the Levant region. It is known by different names and prepared with slight variations across different countries.

  • In the Levant, it is called "Roz bel Haleeb".
  • In Tunisia, it is referred to as "Mhalbiya".
  • In Egypt, it is known as "Roz bel Laban".

This dessert is highly nutritious, making it a perfect meal for young children (aged 2-3 years old). It is easy to prepare and has a rich, creamy texture that makes it irresistible.


Ingredients for Rice Pudding:

Rice Pudding

 

  • 3 kg of fresh liquid milk
  • 1 ½ cups of rice
  • 4 cups of sugar
  • 1 teaspoon of vanilla powder
  • ¼ teaspoon of orange blossom water
  • 1 cup of peeled almonds
  • 1 cup of pistachios (roughly chopped)
  • 1 cup of seedless white raisins
  • 1 teaspoon of ground cinnamon (optional)

How to Prepare Delicious Rice Pudding:

  1. Prepare the Milk:

    • Pour the milk into a deep pot and strain it through a fine metal sieve to ensure a smooth texture.
    • Place the pot over low heat and let the milk boil gently for 15-20 minutes.
  2. Prepare the Rice:

    • Wash the rice thoroughly with cold water and soak it in lukewarm water for about 15 minutes.
    • Drain the rice completely after soaking.
  3. Sweeten the Milk:

    • Add the sugar and vanilla to the boiling milk, stirring well to dissolve the sugar.
    • Let it simmer for 5 minutes, stirring occasionally.
  4. Cook the Rice in the Milk:

    • Wash the soaked rice again with cold water and drain it well.
    • Add the drained rice to the sweetened milk and stir continuously.
    • Reduce the heat to very low, stirring frequently to prevent lumps from forming.
  5. Thicken the Pudding:

    • Continue stirring until the mixture thickens and the rice is fully cooked.
    • Once the pudding reaches the desired consistency, add the orange blossom water and let it simmer for another 5 minutes.
  6. Prepare the Serving Bowls:

    • Choose deep and elegant serving bowls since this dessert looks best in well-presented dishes.
    • Remove the pot from the heat and stir slightly to smooth out the texture.
    • Pour the hot rice pudding into the serving bowls.
  7. Garnish the Pudding:

    • Let the bowls cool for about 5 minutes before decorating.
    • Sprinkle the top with peeled almonds and arrange the raisins evenly over the surface.
    • Add a generous amount of chopped pistachios.
    • Some people prefer to dust a little ground cinnamon on top for extra flavor.
  8. Chill Before Serving:

    • Place the bowls in the refrigerator and let them chill for at least 4 hours before serving.
