For the Dough:

  • 4 cups of all-purpose flour.
  • ½ cup of vegetable oil.
  • 1 tablespoon of sugar.
  • 1 teaspoon of salt.
  • 2 tablespoons of instant yeast.
  • Warm water, as needed.
  • 1 cup of warm milk or 1 cup of yogurt.

For the Filling:

  • 2 kg (4.4 lbs) of spinach, chopped and boiled.
  • ½ cup of olive oil.
  • 2 tablespoons of ground red pepper.
  • 1 teaspoon of salt.
  • 4 onions, finely chopped.

How to Prepare Spinach Fatayer

Step 1: Preparing the Dough

  1. In a large mixing bowl, combine the flour, sugar, bread improver (if available), and salt, then mix well.
  2. In a separate small cup, dissolve the yeast with ¼ teaspoon of sugar and warm water, then let it sit for 10 minutes until it activates and doubles in size.
  3. Add the yogurt (or warm milk) to the flour mixture, followed by the activated yeast.
  4. Gradually add warm water and vegetable oil, kneading the dough until smooth and elastic.
  5. Place the dough in a lightly greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for 1.5 hours until it doubles in size.

Step 2: Preparing the Filling

  1. In a large bowl, mix the boiled spinach with finely chopped onions, salt, red pepper, and olive oil.
  2. Stir well until the filling is evenly combined and ready for use.

Step 3: Shaping the Fatayer

  1. Once the dough has risen, divide it into equal-sized balls.
  2. Lightly grease a smooth surface with vegetable oil, then roll each dough ball into a thin circular shape.
  3. Place a spoonful of filling in the center of each dough circle.
  4. Fold the dough into a triangle shape, sealing the edges tightly.

Step 4: Baking the Fatayer

  1. Preheat the oven to a moderate temperature.
  2. Lightly grease a baking tray and arrange the fatayer on it, leaving space between them to prevent sticking.
  3. Bake for 10 minutes or until they turn golden brown.
  4. Turn on the broiler for an additional 5 minutes to get a crispy golden crust.

Step 5: Serving

  1. Transfer the baked fatayer to a cooling rack for a few minutes.
  2. Arrange them on a serving platter and serve warm with yogurt on the side.
