How to Prepare Stuffed Chicken with Rice:
1. Prepare the Rice Filling:
- Rinse the rice with cold water, then soak it in lukewarm water for 30 minutes.
- In the meantime, clean the chicken thoroughly, washing it well with salt and water.
2. Marinate the Chicken:
- In a deep bowl, mix together:
- Black pepper, white pepper, curry powder, lemon juice, minced garlic, yogurt, and a little salt.
- Coat the chicken completely with this mixture, rubbing it inside and out.
- Make small cuts in the chicken’s surface and insert some of the marinade inside the slits.
3. Cook the Rice Filling:
- Rinse the soaked rice again with cold water and drain it well.
- In a pot over low heat, combine the rice with diced carrots, peas, chopped onion, red and green bell peppers.
- Add water, and let it cook until it is halfway done.
- Sprinkle with a little white and black pepper and curry powder, stirring well.
- Let the mixture cool slightly before stuffing the chicken.
4. Stuff the Chicken:
- Pour any remaining marinade mixture inside the chicken cavity.
- Stuff the chicken tightly with the semi-cooked rice mixture.
- Close the opening securely using wooden skewers or kitchen thread.
5. Roast the Chicken:
- Place the stuffed chicken in an oven-safe dish.
- Cover it with aluminum foil and roast at medium heat for 1 hour.
- After an hour, remove the foil and reduce the oven to low heat, allowing the chicken to develop a crispy golden-brown surface.
6. Serve:
- Transfer the stuffed chicken and rice onto a large serving platter.
- Sprinkle with toasted almonds and pine nuts for a decorative touch.
- Garnish with lemon slices and fresh vegetables around the edges of the dish.
