Syrian Slibin (Akkoub) – Recipe & Cooking Method
Slibin, also known as Akkoub, is a wild edible plant that grows in spring and is widely known in Syrian cuisine. This seasonal delicacy is nutritious, offering numerous health benefits. Farmers harvest it in spring and sell it in markets, making it a highly valued traditional ingredient.
Slibin can be prepared in two different ways:
- Slibin with Olive Oil – a simple, light dish.
- Fried Slibin Patties – a crispy, flavorful dish.
1. Slibin with Olive Oil
Ingredients:
- 2 kg of fresh slibin (akkoub)
- 1 teaspoon of salt
- ½ cup of olive oil
How to Prepare:

Clean the Slibin:
- Remove all the thorns completely from the slibin.
- Wash the stems thoroughly with cold water.
- Soak the slibin in warm water for 30 minutes.
- Wash it again several times to ensure it is free from any dust or sand.
- Drain the slibin in a strainer to remove excess water.

Cook the Slibin:
- In a cooking pot, pour the olive oil and add the cleaned slibin.
- Sprinkle salt over the slibin and place the pot over medium heat until it starts boiling.
- Reduce the heat to low and let the slibin cook for 30 minutes until fully tender.

Serving:
- Once cooked, transfer the slibin to a serving dish and enjoy its rich, earthy flavor.
2. Fried Slibin Patties
Ingredients:
- 3 kg of slibin (akkoub)
- 1 teaspoon of salt
- 1 cup of finely chopped parsley
- ½ cup of finely chopped mint
- 6 eggs
- Zest of 1 lemon
- 1 teaspoon of red pepper powder
- 1 teaspoon of ground cumin
- ½ cup of sifted flour
- 2 liters of vegetable oil (for frying)
How to Prepare:

Clean and Blanch the Slibin:
- Remove all thorns from the slibin and wash it thoroughly.
- Bring 4 liters of water to a boil in a deep pot.
- Add the slibin to the boiling water and let it cook for 10 minutes.
- Remove the slibin from the boiling water and drain it in a colander.

Prepare the Batter:
- In a large bowl, crack the eggs and add salt, lemon zest, cumin, chopped parsley, mint, and red pepper powder.
- Whisk the mixture well until smooth.
- Gradually add the sifted flour, stirring continuously until you get a thick, smooth batter.

Fry the Slibin:
- Heat 2 liters of vegetable oil in a frying pan over medium heat.
- Dip each slibin piece into the batter, making sure it is well coated.
- Carefully place the coated slibin into the hot oil.
- Allow it to cook without flipping until the edges turn golden brown.
- Flip and fry until the entire piece is crispy and golden brown.
- Remove the fried slibin from the oil and place it on a plate lined with paper towels to absorb excess oil.

- Arrange the fried slibin patties on a serving dish.
- Serve hot with a side of tabbouleh or any fresh salad.
