- 2 kg of chicken breasts
- 3 medium-sized onions
- 2 tablespoons of chicken soy sauce
- 3 red bell peppers
- 2 yellow bell peppers
- 3 green bell peppers
- 3 cloves of minced garlic
- 1 fresh ginger root
- 2 tablespoons of salt
- 1 tablespoon of brown sugar
- 3 tablespoons of flour
- 2 tablespoons of olive oil
- A quantity of vegetable oil for frying
How to Prepare Szechuan Chicken:
Preparing the Ingredients:
- Thoroughly clean the chicken breasts with salt and water, then cut them into medium-sized, uniform cubes.
- Peel the onions and chop them into evenly sized square pieces.
- Remove the seeds from the bell peppers and cut them into cubes similar in size to the chicken pieces.
Cooking the Vegetables:
- Heat a generous amount of vegetable oil in a frying pan over high heat until it is very hot.
- Add the red, green, and yellow bell peppers along with the chopped onions. Stir-fry the mixture until the onions start to soften.
- Remove the vegetables from the oil and transfer them to a strainer or a paper towel to drain excess oil.
Coating and Frying the Chicken:
- In a shallow dish, mix the flour with 1 teaspoon of salt.
- Dredge the chicken pieces in the flour mixture, ensuring they are evenly coated.
- Fry the coated chicken cubes in the hot oil until golden brown.
- Remove the fried chicken from the oil and place it on a paper towel to drain any excess oil.
Preparing the Sauce:
- Grate the ginger and mix it with the minced garlic.
- In a deep saucepan, heat the olive oil over low heat and sauté the garlic and ginger mixture, stirring well.
- After about 5 minutes, add the Malaysian sauce and chicken soy sauce, stirring continuously until the sauce thickens and blends well.
Combining the Ingredients:
- Add the fried chicken cubes, sautéed vegetables, and onions into the sauce. Stir well to coat everything evenly.
- Sprinkle the remaining salt and brown sugar over the mixture, stirring to ensure all flavors are well combined.
- Lower the heat slightly and let the dish cook for 15 minutes, allowing the chicken to absorb all the flavors.
Serving:
- Remove the pan from heat and transfer the Szechuan chicken to a serving dish.
- Serve hot alongside a plate of steamed rice.
