  • 1 tablespoon ghee

For the Vegetables:

  • ½ kg zucchini, chopped
  • 2 medium-sized onions, chopped
  • 1 kg tomatoes, diced
  • Salt, to taste
  • ¼ cup water
  • 1 tablespoon tomato paste
  • 8 cloves of garlic, finely minced
  • 3 tablespoons dried mint

For the Spices:

  • 1 teaspoon mixed spices
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cardamom
  • ¼ teaspoon garlic powder

How to Prepare Tbabekh Rouho:

1. Cooking the Meat:

  1. Heat the ghee in a medium pot over medium heat until it melts.
  2. Add the lamb pieces and cook while stirring until they turn golden brown.
  3. Season the meat with cinnamon, mixed spices, garlic powder, cardamom, and nutmeg, then stir well to combine.

  1. Add the chopped onions to the lamb and stir well.
  2. Add the zucchini and diced tomatoes, then mix everything together.
