Turkish Iskender Kebab – Recipe & Cooking Method
Today's dish is one of the most delicious dishes in Turkish cuisine. It is a well-known type of kebab called Iskender Kebab. Ingredients for Iskender Kebab:
- 500 grams of beef steak.
- 1 tablespoon of tomato paste.
- 1 large tomato.
- 2 cups of yogurt.
- 3 cloves of garlic.
- 2 medium-sized pita breads.
- 1 teaspoon of salt.
- 1 teaspoon of black pepper.
- 1 teaspoon of mixed spices.
- 1 teaspoon of ground red pepper.
- 1 tablespoon of ghee (or butter).
For Garnishing:
- 2 tablespoons of sliced almonds.
- 1 tablespoon of chopped parsley.
How to Prepare Iskender Kebab:

Heat a small amount of vegetable oil in a non-stick pan over medium heat. Add the beef steak, black pepper, and salt, stirring occasionally until the meat is fully cooked.

Once the steak is cooked, slice it into thin strips and set it aside.

Blend the tomato in a food processor until it turns into a smooth sauce.

Pour the tomato sauce into a medium-sized pan over medium heat. Add the tomato paste, mixed spices, ground red pepper, and ghee, stirring well. Let the mixture simmer until it starts to boil.

Once the sauce starts cooking, add the sliced steak to it and let it simmer over medium heat for 15 minutes.

In a separate pan, heat a little oil or ghee, then cut the pita bread into small squares and fry them until they turn golden and crispy.
