Walnut maamoul is one of the most delicious and famous types of Middle Eastern sweets, especially popular in Syrian cuisine.

This traditional dessert is a staple during festive occasions, particularly Eid al-Fitr and Eid al-Adha. It is loved for its buttery, crumbly texture and rich filling, making it a cherished treat in every household.

Maamoul dough is soft and can be filled with walnuts, cheese, almonds, or pistachios to suit different preferences.


Ingredients for Delicious Walnut Maamoul:

For the Dough:

  • 1 kg of semolina (about 4 cups)
  • 2 cups of fine flour
  • 1 block of soft vegetable butter
  • About 1 cup of powdered sugar
  • 1 tablespoon of mahlab (aromatic spice)
  • 1 tablespoon of ground nutmeg
  • ½ cup of rose water and orange blossom water
  • 2 tablespoons of yeast

For the Filling:

  • 1 tablespoon of rose water
  • 1 ½ cups of ground walnuts
  • 1 teaspoon of orange blossom water
  • 2 cups of powdered sugar

How to Prepare Walnut Maamoul:

Preparing the Dough:

  1. In a deep bowl, mix the flour, semolina, sugar, yeast, mahlab, and nutmeg. Stir well to combine the dry ingredients.
  2. Gradually add the rose water and knead the dough until it becomes soft and smooth.
  3. Place the dough in a buttered bowl, cover it well, and leave it in a warm place to rest and ferment for about 30 minutes.

Preparing the Filling:

  1. In a medium bowl, mix the ground walnuts, sugar, a few drops of orange blossom water, and a little rose water.
  2. Stir well until the mixture becomes sticky and cohesive.

Shaping the Maamoul:

  1. After the dough has rested, take a small ball of dough and make a small hole in the center using your finger.
  2. Place a small amount of the walnut filling inside the hole.
  3. Carefully close the dough around the filling, shaping it into a smooth ball.
  4. Place the ball into a maamoul mold and press gently to create the traditional patterns.
  5. Flip the mold and tap it lightly on a table or wooden surface to release the shaped maamoul piece.
  6. Arrange the shaped maamoul pieces on a baking tray.

Baking the Maamoul:

  1. Preheat the oven to 180°C (356°F).
  2. Bake the maamoul for about 15 minutes, or until they turn golden brown.
  3. Remove the maamoul from the oven and let them cool on a wire rack or a clean cloth to prevent sweating.

Final Touch:

  1. While the maamoul is still warm, sprinkle powdered sugar over the top using a fine sieve.
  2. Allow the maamoul to cool completely before serving.

Serving:

  • Arrange the walnut maamoul in a serving dish.
