Chicken Breast with White Sauce – Recipe and Cooking Instructions

For the Chicken:

  • 6 chicken breasts

  • 200 grams of white mozzarella cheese

  • 1/2 cup of freshly grated Parmesan cheese

  • 2 teaspoons of dried parsley

  • 1 and 1/2 teaspoons of garlic powder

  • Black pepper to taste

  • Salt to taste

For the Mushroom Filling:

  • 100 grams of butter

  • 400 grams of fresh mushrooms, sliced

  • 4 tablespoons of chopped parsley

  • 8 cloves of garlic, minced

  • Black pepper to taste

  • Salt to taste

For the White Sauce:

  • 1 tablespoon of olive oil

  • 1 cup of freshly grated Parmesan cheese

  • 2 cups of cooking cream

  • 4 cloves of garlic, minced

  • 2 tablespoons of Dijon mustard

  • 4 tablespoons of chopped parsley

  • 1 teaspoon of cornstarch dissolved in 4 tablespoons of drinking water

  • Salt to taste

  • Black pepper to taste


How to Prepare the Chicken:

Melt the butter in a pan and sauté the minced garlic for about one minute.

Add the sliced mushrooms along with salt and black pepper, then sprinkle in the chopped parsley. Stir well until everything is combined.

Remove the mushroom mixture from the pan and set it aside to cool, reserving the remaining cooking juices for later use.

Pat the chicken breasts dry with paper towels. Season both sides with salt, black pepper, dried parsley, and garlic powder to enhance the flavor.

Carefully slice each chicken breast horizontally without fully separating the two halves.

Stuff each breast with mozzarella slices, a small amount of the mushroom mixture, and about 2 tablespoons of Parmesan cheese.

Secure the chicken breasts with toothpicks to keep the filling inside.

Reheat the reserved pan juices and sear the stuffed chicken breasts on both sides until golden.

Transfer the chicken to a preheated oven at 200°C (about 400°F) and bake for approximately 20 minutes until fully cooked.


How to Prepare the White Sauce:

Heat the olive oil in a clean saucepan and sauté the minced garlic briefly.

Lower the heat and add the cooking cream and Dijon mustard. Stir gently and bring to a simmer.

Add the remaining mushroom mixture, stirring continuously.

Gradually add the Parmesan cheese while stirring.

Pour in the dissolved cornstarch mixture and continue stirring until the sauce thickens. Season with black pepper and salt as needed.

Sprinkle the chopped parsley into the sauce.

Add the baked chicken breasts to the sauce, allowing them to simmer gently for a minute or two.

Turn off the heat and transfer the chicken with the creamy sauce into a serving dish.
