-
1 medium-sized onion, quartered
-
1 clove of garlic
-
2 medium-sized lemons
-
1 tablespoon of vegetable oil
-
1 teaspoon of white pepper
-
1 teaspoon of salt
-
1 stick of cinnamon
-
5 cloves
-
5 cardamom pods
For the Rice:
-
2 cups of rice
-
1 and 1/2 cups of drinking water
-
1 tablespoon of salt
-
3 tablespoons of vegetable oil
How to Prepare Chicken with Rice and Lemon:
First, juice the lemons and grate their zest, reserving 1 tablespoon of zest for garnish later.
Mix the lemon juice with the white pepper, salt, and minced garlic until well combined.
Rub the marinade thoroughly over the chicken thighs on both sides, then refrigerate for two hours to allow the flavors to infuse.
Next, heat the vegetable oil in a suitable pot over medium heat. Add the marinated chicken pieces and sauté until their color changes.
In a large pot, place the quartered onion, chicken pieces, cardamom, cloves, and cinnamon stick. Cover the ingredients with hot drinking water and bring to a boil. Let it simmer for about 30 minutes or until the chicken is fully cooked.
Meanwhile, prepare the rice:
In a separate pot, heat the oil and add the rice. Stir gently for a few minutes.
Add the appropriate amount of water and salt. Cover and cook until the rice is tender and fluffy.
Finishing the Chicken:
Once the chicken is cooked, remove it from the boiling water and arrange the pieces on a baking tray.
Brush the chicken on both sides with butter and place it in a preheated oven for a few minutes until it turns a beautiful golden color.
Assembling the Dish:
Spoon the cooked rice into a serving platter. Arrange the golden chicken pieces neatly on top.
Sprinkle the reserved lemon zest over the dish.
For an extra touch, you can garnish the platter with lemon slices, toasted nuts, or pine nuts, enhancing both the taste and presentation.
Serve the dish hot to family or guests, and enjoy its refreshing, savory flavor along with all its health benefits!
