Kishk Soup – Recipe and Preparation Method

Kishk soup is the perfect comfort dish for cold winter days, offering a natural remedy for colds and flu. It’s packed with essential nutrients thanks to its wholesome ingredients. Kishk has been a staple of Arab kitchens for centuries, known for its ease of preparation, delicious taste, and nourishing properties.

Traditionally, kishk is prepared during the summer by mixing sour yogurt, bulgur, and salt. The mixture is kneaded well, shaped into equal-sized pieces, placed on flat trays, and dried under the sun until completely hardened.

Once dry, the kishk pieces are carefully stored in cool, dry places for use throughout the year.

Ingredients for Kishk Soup:

  • 4 cups of fine kishk powder

  • 3 medium-sized onions

  • 1/4 cup of olive oil

  • Crispy bread

  • 3 cups of hot water

How to Prepare Kishk Soup:

Peel the onions and chop them into medium-sized pieces.

In a deep cooking pot, add the chopped onions along with olive oil and a pinch of salt. Sauté the mixture over medium heat, stirring frequently, until the onions turn golden.

Important Tip:
Be cautious not to let the onions turn reddish, as this indicates burning, which would spoil the flavor of the soup.

Add the kishk powder directly into the pot with the sautéed onions. Stir the mixture thoroughly over low heat.

Gradually pour the hot water into the pot while stirring continuously in one direction. Stir rapidly and without stopping to prevent the kishk from clumping or separating.

Once the mixture starts to boil, continue stirring until it thickens into a smooth, hearty soup.

Alternative Method:

If you don’t have kishk powder, you can use whole kishk pieces instead. Soak the pieces in cold water for about two hours. Then, blend the soaked kishk thoroughly in a blender. Strain the blended kishk through a fine sieve to remove any lumps. Gradually add the smooth kishk mixture to the onions and oil, stirring continuously over low heat until the mixture comes to a boil.

Let the soup simmer over medium heat for about 30 minutes.

Meanwhile, prepare some crispy bread pieces and lightly toasted pine nuts for serving.

When ready, ladle the hot kishk soup into a deep serving bowl. Arrange the crispy bread pieces and pine nuts decoratively over the top.

Serve the kishk soup hot to enjoy its maximum warmth and health benefits.
