Marasee’ with Mortadella – Saudi-Style Savory Pancakes – Easy Recipe
Marasee’—also known as "Al-Masaayeb"—are a popular appetizer in Saudi Arabia, and today we bring you a delicious variation: Marasee’ stuffed with turkey mortadella and cheese. This dish is both flavorful and nutritious, making it a wholesome and satisfying meal that can be served as a main dish or hearty starter. It’s quick to prepare—ready in just about 40 minutes—and the following recipe serves 8 people.
Ingredients:
For the Marasee’ (Savory Pancakes):

½ cup of fresh milk (or powdered milk diluted with water)

2 fresh eggs

1 teaspoon of vinegar

1 teaspoon of instant yeast

½ teaspoon of salt

¾ cup of drinking water

½ teaspoon of turmeric

1 cup of all-purpose flour
For the Filling:

100 grams of turkey mortadella, sliced or diced

100 grams of shredded mozzarella cheese
For the Sauce:

100 ml of cooking cream

A pinch of paprika
-
A pinch of salt

A pinch of white pepper
How to Prepare Marasee’ with Mortadella:

Prepare the Pancake Batter:
In a large mixing bowl, combine all the pancake ingredients: milk, eggs, vinegar, yeast, salt, water, turmeric, and flour. Whisk well until the batter is smooth and lump-free. -
Cook the Pancakes:
Heat a non-stick skillet over medium heat. Using a ladle, pour a portion of the batter into the pan and spread it slightly. Cook for 1 minute, then flip and cook for another minute. Repeat this process until all the batter is used. -
Add the Filling:
Once the pancakes are ready, place a spoonful of turkey mortadella and shredded mozzarella in the center of each one. Fold each pancake over the filling to seal it into a semi-circle or roll, and arrange them neatly in a baking tray. -
Make the Cream Sauce:
In a small saucepan, combine the cooking cream with paprika, white pepper, and salt. Stir until well blended and gently warm over low heat. -
Bake:
Pour the prepared cream sauce over the stuffed marasee’ in the tray. Place the tray in a preheated oven at 180°C (350°F) and bake for about 15 minutes, until the cheese melts and the flavors meld together. -
