Mesh Pastries – Recipe and Preparation Method

How to Prepare the Dough:
Place all the dough ingredients into a deep mixing bowl and combine them well, adding water as needed to form a cohesive dough. Let the dough rest in a warm place for at least 3 hours until it rises properly.
Filling Ingredients:

200 grams of feta cheese

1 tablespoon of dried mint

2 tablespoons of finely chopped black olives

3 tablespoons of coarsely chopped walnuts

1 egg, beaten with a little vinegar for brushing the pastry tops
How to Prepare Mesh Pastries:
To prepare the filling, mix the feta cheese, dried mint, walnuts, and chopped olives in a bowl. Stir well until the ingredients are fully combined.
Roll out a portion of the dough on a floured surface to prevent sticking.
Using a cup or a circular cutter, cut out evenly sized circles from the dough.
Place about one tablespoon of filling in the center of each dough circle.
Roll out another portion of the dough and use a mesh-pattern cutter (or pastry roller) to create a lattice design by slicing the dough into strips lengthwise.
Place a piece of the mesh-patterned dough over each filled dough circle.
Cut the mesh-covered pastry using the same circular cutter to neatly match the shape.
Brush the tops of the pastries with the beaten egg and vinegar mixture.
Arrange the pastries on a baking tray lightly greased with oil.
Place the tray into a preheated oven at 200°C (about 400°F) and bake for about 20 minutes, or until the pastries are fully cooked and golden brown.
