Moroccan Harira – Hearty Traditional Ramadan Soup
Harira is one of the most beloved and traditional soups in the Maghreb region, especially in Morocco. This hearty and flavorful dish is an essential part of Ramadan iftar tables, but it's also enjoyed year-round. Rich in nutrients and full of spices, legumes, and herbs, Harira brings both comfort and nourishment with every spoonful.
Ingredients:

1 cup of small diced meat (beef or lamb – traditionally "ras al-asfour" size pieces)

1 cup of chickpeas (soaked overnight)

2 medium tomatoes, blended or grated

2 tablespoons of vermicelli

2 medium onions, finely chopped

2 tablespoons of butter
-
2 tablespoons of tomato paste

1½ liters of water
-
2 tablespoons of all-purpose flour
-
2 tablespoons of fresh coriander (cilantro), chopped
-
½ teaspoon of saffron
-
1 teaspoon of black pepper
-
1 teaspoon of salt (adjust to taste)

2 tablespoons of fresh parsley, chopped
Preparation:
Step 1: Prep the Chickpeas

Soak the chickpeas overnight in water. The next day, drain and rinse them well.
Step 2: Sauté the Aromatics

In a large pot, add the chopped onions, butter, and salt.

Sauté over medium heat until the onions are soft and golden.
Step 3: Cook the Meat

Add the meat cubes and black pepper. Stir well until the meat changes color.

Pour in 1 liter of water, cover, and let it cook for about 20 minutes or until the meat is tender.
Step 4: Add the Chickpeas and Tomatoes

Add the drained chickpeas to the pot.

Mix in the blended tomatoes and saffron, stirring well to combine.
Step 5: Thicken the Soup

In a separate bowl, whisk together ½ liter of water, the tomato paste, and the flour until smooth.

Gradually pour this mixture into the pot while stirring. Continue cooking until the soup begins to thicken.
Step 6: Final Touches

Add the vermicelli and chopped coriander. Let it simmer over low heat for another 5 minutes, or until the vermicelli is fully cooked.
Serving:
Ladle the hot Harira into bowls and garnish with chopped parsley.
Serve it warm with lemon wedges, dates, or crusty bread for a traditional and satisfying experience.
