Mushroom Soup – Recipe and Cooking Instructions

Mushroom soup is a hearty and nutritious dish where mushrooms serve as the star ingredient. Mushrooms are commonly used as a main feature in meals like Mushroom Maqluba and Mushroom Soup and as a secondary ingredient in dishes like pizza and various other recipes.

Mushrooms are incredibly beneficial: they act as powerful anti-cancer agents, help regulate blood pressure, strengthen bones, protect the skin, and promote digestive health. They also help prevent colds and associated illnesses.

Ingredients for Mushroom Soup:

  • 1 kilogram of mushrooms

  • 1 cup of diced carrots

  • 2 onions, finely chopped

  • 1 clove of garlic

  • 1 cup of green peas

  • 2 liters of water

  • 2 tablespoons of salt

  • A pinch of black pepper

  • About 1/2 cup of finely chopped parsley and mint

  • 1/4 cup of oil or 3 tablespoons of ghee

  • 1/4 cup of finely sifted flour

  • 1 cup of fresh milk

How to Prepare Mushroom Soup:

First, wash the mushrooms carefully and thoroughly to remove any dirt. Chop the mushrooms, onions, parsley, and mint into medium-sized pieces and set aside. Also, dice the carrots into medium-sized pieces.

Mash the garlic clove well.

In a large pot, heat a little olive oil or ghee, then add the chopped onions and mashed garlic. Stir the mixture well.

Add the chopped mushrooms, peas, carrots, 1 teaspoon of salt, and a pinch of black pepper. Cover the pot tightly and let the mixture cook gently over low heat until tender.

Meanwhile, in a separate pan, melt some ghee and add the sifted flour over medium heat. Stir continuously.

Gradually add the fresh milk while stirring constantly until the mixture thickens into a creamy sauce.

Once ready, pour the cooked mushroom, onion, carrot, and pea mixture into the milk sauce. Stir well to combine.

Let the soup simmer gently for about 15 minutes until fully cooked and flavors are well blended.

Turn off the heat and ladle the hot soup into a serving bowl.

Add a final artistic touch by garnishing the soup with some extra peas, carrots, and a sprinkle of fresh mint and parsley.

Serve the mushroom soup hot and enjoy this comforting, flavorful dish!
