Pea Maqluba – Recipe and Cooking Instructions
Pea Maqluba is a delicious and highly nutritious dish, packed with beneficial ingredients like meat, peas, and rice.
Ingredients for Pea Maqluba:

1 and 1/2 cups of green peas

2 cups of rice

500 grams of meat (lamb or beef)

2 carrots

1 potato

1 tablespoon of salt

1/2 cup of vegetable oil or 2 tablespoons of ghee

1 teaspoon of black pepper

A handful of mixed nuts for garnish
How to Prepare Pea Maqluba:
First, place the rice in a bowl. Add 1 tablespoon of salt and 3 cups of warm water, and let it soak for 30 minutes.
In another pot, add the peas with a little water and some salt. Let them boil over medium heat until the peas are tender.
Next, add the meat and 1 cup of water to the peas. Stir the mixture well and let it simmer over low heat for about 15 minutes.
In a separate pot, melt 2 tablespoons of ghee or heat some vegetable oil, depending on your preference.
Add the drained and thoroughly rinsed rice to the pot. Sprinkle in a pinch of salt and black pepper, then add the meat and peas mixture. Pour about 2 cups of warm water into the pot.
Allow the mixture to cook over medium heat until it starts boiling. Once it boils, reduce the heat to low, cover, and let it simmer for about 30 minutes until the rice is fully cooked.
Meanwhile, cut the potato into medium-sized pieces. Heat some oil in a pan and fry the potato pieces until they turn golden brown. Remove them from the oil and set aside.
Cut the carrots into medium pieces as well.
In another small pot, melt a tablespoon of ghee. Add the meat and peas mixture along with the carrot pieces, fried potatoes, a sprinkle of salt, and the nuts. Stir everything gently over low heat until fully combined and the vegetables are tender.
When the rice and peas are ready, turn off the heat and let the pot sit, covered, for 5 minutes without opening the lid.
After 5 minutes, transfer the rice and peas to a large serving platter. Arrange the meat, peas, fried potatoes, carrots, and nuts on top in a neat, decorative manner. You can also arrange some fresh vegetables around the platter for an even more beautiful presentation.
Serve hot, ideally with a side of cucumber and yogurt salad, which complements this dish perfectly.
