Rice with Fava Beans – Recipe and Cooking Method
Rice with fava beans is a traditional dish that originated in the Levant region. It’s easy to prepare and highly nutritious, thanks to the many health benefits of fava beans. Fava beans help regulate blood pressure and blood sugar levels, while the rice provides the body with a high amount of energy and can also help relieve constipation.
Ingredients for Rice with Fava Beans:

1 kilogram of ground meat

1 kilogram of rice

1 kilogram of fresh fava beans

1/4 cup of olive oil or 4 tablespoons of clarified butter (ghee)

1 cup of pine nuts

1 cup of almonds
-
1 tablespoon of black pepper
-
1 tablespoon of salt
How to Prepare Rice with Fava Beans:
First, thoroughly rinse the rice under cold water. Add a pinch of salt, cover it with warm water, and let it soak for 30 minutes.
In a separate pot, place the ground meat, add a tablespoon of salt, cover it with water, and set it over low heat for 15 minutes.
Next, add the fava beans to the meat and stir the mixture well. Pour in enough water to cover the meat and beans completely. Let the mixture cook over medium heat for about 10 minutes.
Meanwhile, rinse the soaked rice with cold water again and drain it well using a fine sieve to remove any excess water.
In a separate pot, melt the clarified butter or heat the olive oil over low heat. Add the drained rice and a pinch of salt, stirring well to coat each grain.
Then, add the cooked fava beans and meat mixture to the rice, mixing thoroughly. Pour about three cups of hot meat broth into the mixture. Add another pinch of salt and a tablespoon of black pepper. Once the mixture starts boiling, cover the pot and reduce the heat to low. Let it cook gently for about 30 minutes until the rice is fully cooked and the flavors are absorbed.
After cooking, turn off the heat and let the dish rest, covered, for another 10 minutes before serving.
Meanwhile, in a small pan, sauté the almonds, some boiled meat pieces, and a tablespoon of butter over low heat until lightly golden.
Fluff the rice and fava beans gently, then transfer them to a serving dish. Garnish the top with the sautéed meat, nuts, and some fresh vegetable slices if desired.
Rice with fava beans is best served hot, accompanied by fresh salads, raw vegetables, or a side of yogurt.
